Boston Butt in the Slow Cooker

Missy here. I may have shared a pork roast in the slow cooker before. But this time I did something a little different.

I don't typically add anything to a pork roast like I do a beef roast because I usually end up shredding the pork and making pulled pork sandwiches. But this time I wanted to eat it as a roast for the first meal and then use the leftovers for sandwiches.


So I peeled and cut my carrots in chunks. And then I went to get potatoes...


And had none. WHO RUNS OUT OF POTATOES???


Well, apparently, I do. :) (Story of my life to not have ingredients when I need them.) SO... I did have sweet potatoes. I decided to do a high vitamin A meal. :)


I coated the roast with a dry rub-- "Butt Rub" from a local barbecue restaurant. Then I put the roast in the Crock Pot and slow cooked it on low all day. About 45 minutes before dinner time, I added the large chunks of sweet potato and carrots.

But I decided the meat was too fatty.


So I pulled the meat out to let it cool for a bit while the potatoes and carrots cooked. Once I could handle it, I removed most of the fat.



Then once the veggies were tender and it was time to eat, I put the meat back to quickly reheat.



It turned out delicious. After eating leftovers once, we still have enough meat to have barbecue sandwiches. I look forward to that!

  1. I am so laughing that you ran out of potatoes. It is so frustrating when you think you have something and it turns out you don't. But then you discover a new recipe. yay! That roast sounds yummy and I happen to have a pork roast I was going to cook this weekend. I don't think I have potatoes either, but I do have carrots.

  2. I would be all over this!!! Pork and sweet potatoes and carrots and throw in some applesauce, and we have the happiest Ruthy EVER!!!!!

    This is such a clever twist on beef pot roast, Missy! I'm in love!!!!

  3. I'm always one ingredient short of a recipe. LOL And it's always freezing cold (can we say -35 with the windchill?) or snowing to beat the band. Yesterday I ran out of bread and figured I'd just try my hand at baking again only I didn't have any yeast so I decided to make Irish soda bread instead. Yum. :-) I felt very pioneerish making do with what I had in the pantry.

    1. Good for you, Kav! Last time I decided to make bread, I found my yeast had expired like 3 years earlier. LOL I wish I had thought of the soda bread that day! Maybe next time. :)

  4. Guess who has a big chunk of pork in the refrigerator? Me!

    I bought the two-pack at Sam's last week to make Mindy's pulled pork tacos (delicious, by the way), and was planning to cook the second one off without the spices for bbq pulled pork.

    But this looks so much better, and there will be leftovers for the pulled pork, too!

  5. I like barbecued pork in restaurants, and my husband's secret rib recipe... but don't care for MY cooking of pork. I keep trying but nada. Will give this a shot.

  6. Missy, doesn't that just drive you nuts when you know you've got something, then discover you don't? Especially when you were just at the store, contemplating said item, but were convinced you already had it. Sigh.

    It's funny, now that number one son is off to college, I don't go through near the amount of potatoes that I did before. I just looked at what I had in there and they were sprouting eyes. Guess I'd better use them quick.

  7. I love mixing pork and sweet potatoes, Missy. I still haven't drummed up the courage to try our slow cooker. It sat on the counter for months after we bought it. Then I surrendered and put it in the cupboard. I just can't get with the idea of leaving an appliance plugged in all day while I'm gone.

    1. Mary Cate, it makes me a little nervous, too. That's why I bought a new one. The old one scared me.

      One thing that helps me is to set the slow cooker on the stovetop. It feels safer to me there.

  8. Oh, that looks super yummy! And I'm with you on the fattiness of pork. My husband doesn't agree, though. So, I pull of all the fat bits, put them aside, and he fries them up with beans. YUCK. But hey, each to their culinary own, right?
