Vegan Gingerbread Scones

Here's a trick question. How can a scone be healthy?

My honest answer is that depends on what you mean by healthy. Scones are so wonderful and satisfying, that eating one (or more) with a cup of tea is soul-satisfying, and that's healthy for your well being.

But, there is this little thing about all that sugar, and butter, and well, I won't dwell on it if you won't.



There is a heart-healthy alternative though. One you can indulge in without any guilt at all.

For Christmas morning, my daughter baked us some absolutely lovely and delicious gingerbread scones.

I was still sleeping while she did this baking, so alas, I have no photos of the baking in progress.
I do have the end result.


The recipe came from this beautiful blog - Salted Plains - Gingerbread Scones with Cranberries

The recipe might sound intimidating with the long list of ingredients, but it was absolutely worth it.

I love the mix of flours  - rice, almond, sorghum - and the spices were divine - ginger, cinnamon, cloves. Dried cranberries gave a nice burst of tart flavor, but the scones were richly flavorful on their own. We didn't add the drizzle, but I'm sure it would have been a nice sweet touch.





The Salted Plains scones look gorgeous. Our photography isn't as great - we were too busy eating.

So, if you're looking for a healthy way to indulge - this is a great recipe to try.

PS - they froze very well. I still have a couple left and I'm parsing them out. They taste really good with cream cheese on them!

Followup from last week - the black-eyed peas Shepherd's Pie was delicious!
It tasted even better the next day with some grated cheddar on top!!!

  1. Vegan and gluten free.... And you're right the website pics were so pretty!

    I tend to not go this far... If I want to indulge, I indulge in a little bit of deliciousness, then cut myself off. Like a dab of White Christmas ice cream... Or one piece of chocolate at the end of a successful day.

    If I make stuff like this, my family would just sit and stare at me in shocked, long-suffering silence, but that would last SHORT SECONDS and then they'd send me for mental acuity testing while contacting the home-of-their-choice for a room.

    I think I've spoiled them, and there are so many of them that when it's just me, I can not bother... and for them, I really want to give them my fun, indulgent recipes.

    But I also understand needing a nibble of this or that, so I do that too... (but don't hate me that it's never vegan or gluten free, okay????)

      Though I have to admit, my oldest daughter and husband have that same reaction.

      But they were delicious. Promise!!!

  2. This is awesome for me because my daughter has allergies and she's vegan. Scones haven't been something easily translated to different flours -- not that we've experimented a whole lot but the times I have they turned out heavy or soggy. Blech.

    I only make scones a few times a year -- for high tea company and the school's volunteer brunch so I haven't tried very hard to make a vegan version...but now you've done the homework for me -- again! Woot. I'll have to make a batch before the snow melts away. Gingerbread scones sound like they should be winter fare.

    Oh -- and I didn't know there were scone pans!!!! I just make mine as rounds, but that's really cool too.

    1. Kav, I usually just do a round and cut like a cake, but she has this fancy pan. The only thing I don't like about the pan is the size of each scone. Guess I'll just have to have two!

    1. Thanks for visiting. I have to admit, I was a bit doubtful, but since my daughter baked them I was willing to try - and they were really good. I was secretly very pleased that she left them in the freezer when she went home. :)
