Jingle Bells, Jingle Bells, Chocolate All the Way

Well, it's that time of year again. Time for me to decide on the best cookie recipe to take to my friend, Drenda's, annual cookie swap next week. But while I'm doing that, I thought it would be fun to revisit one of the recipes I've taken in the past. 

Triple Chocolate Knock-Out Cookies have so much chocolate, you can't help but sigh with holiday bliss.

For these scrumptious cookies, you will need:
  • 2 1/2 sticks butter, softened
  • 2 cups sugar
  • 2 eggs
  • 2 ½ tsp. vanilla
  • 2 cups all-purpose flour
  • ¾ cup cocoa
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • ½ tsp. cinnamon
  • ½ tsp. ground chipotle pepper
  • 2 cups white chocolate chips
  • 1 ½ cups semisweet chocolate chips (I used the Ghirardelli 60% cocoa)
Preheat oven to 350 degrees.

Using an electric mixer, cream butter and sugar until fluffy, scraping sides occasionally. Add eggs one at a time, mixing well after each addition. Add vanilla and mix to combine.


Sift dry ingredients together. Including the pepper. I promise, it won't be hot. It'll just give it a little kick. But if you don't believe me, simply increase the cinnamon by another 1/4 to 1/2 tsp.

Now add the dry ingredients in small amounts to the butter/sugar mixture, mixing after each addition until blended. 

Gently stir in the white and chocolate chips. 

The batter will be VERY stiff, so consider it an upper arm workout.

Now, drop by tablespoonfuls onto a baking sheet (I used a cookie scoop for this). 

Bake 8-9 minutes. Cookies should be done, but still soft.

Let cool on baking rack and enjoy!

I guess I was busy singing Christmas carols or simply so eager to get them on a platter and over to Drenda's that I forgot. But envision a chocolate chocolate chip cookie. 


I love these because A) of all the chocolate and B) they're a nice twist on standard chocolate chip cookies. Not that there's anything wrong with chocolate chip cookies. No way, no how. But one of these with a cup of coffee, tea or milk... Mmm, mmm, mmm!

I can't think of a better way to ring in December. After all, it is the most wonderful time of the year.

  1. I like this fun "spice" twist with chocolate chip, and I love the cocoa based dough! This is a must try, but I don't have white chocolate chips. Must add to grocery list!

    I love all kinds of baking at holiday time, but pies are my favorite. I love pie. I love rich, creamy or fruity or layered fillings. I love chiffons and lemons and pecans and chocolates and did I mention apple and cherry and oh gosh... the list goes on!

    But I also like to do fancy layered cakes for parties. They're so impressive to look at, and if they taste divine, too, well: BONUS!!!! Tex, this looks marvelous! I don't do cookie exchanges (I think you have to have friends for that sort of thing!!!! DRAT!) but if I did, I would be happily toting cookies along and singing all the way!

    1. Ruthy, Drenda's is the only cookie exchange I participate in. She's brought th same group of ladies together for more than a dozen years now, so it's more fun than anything else. Although, we do like eating those cookies, too.

      So how do you really feel about pie? ;) Believe it or not, I have one son who will not touch anything with pie in the name. Now how unAmerican is that?

      I'm actually contemplating a couple of trifles for Christmas. Can't decide which one to do, though. One is a Mexican Hot Chocolate trifle and the other is a red velvet trifle. Both look so festive, but for Christmas, the red would be great. However, the other is chocolate. Decisions, decisions...

  2. Hmmm interesting to put chipotle in the cookie mix. Sounds like Mexican molee.
    (I spelled that with two ee's because don't know how to make the accent mark over the e and without it you might think I was referring to a rat like mole. LOL)

    Cookie exchanges can be really fun. And I agree. Its the people that make it fun, the cookies are just a bonus. smile

      My SIL always adds chipotle to her brownies. She likes that little bit of smokiness.

    1. That's Drenda. Her house is simple, but that woman has a flare for decorating. Sometimes, I just want to kidnap her and tell her she can't leave until my house looks half as good as hers. Of course, I'd feed her well. ;)

  4. You had me at the mention of chocolate. Though the spice still scares me. :-) Must break out of my chocolate chip rut and try white chocolate chips or even butterscotch chips. Maybe that will be my brave venture into holiday baking this year. :-)

    I haven't started baking yet. This year it will be low key, I think. My daughter and I usually get together to bake...chocolate thumb print cookies are always on the list. And lemon poppyseed. They take some work but you can freeze the dough and make cookies later.

    1. Kav, I was just contemplating thumbprint cookies yesterday. I've never seen chocolate ones, though. You must share.

      As for the spice, just skip it then, but do add the cinnamon. I think you'll like it.

  5. These look delicious, Mindy! And I'll even try it with the chipotle pepper :)

    For one thing, it's a good excuse to replenish my stock, right?

    And don't tell my husband that you've started Christmas baking already. I'm just starting to recover from the Thanksgiving week extravaganza!

    1. No worries, Jan. I haven't started yet. I will by next week, though, if only for the cookie exchange. However, I have started going through my recipes, deciding what I can make ahead and freeze and what I'll hold off on until the last week. So long as I have plenty when the masses arrives. :)
