Egg Nog Cream Pie, A New Holiday Favorite!

Ya gotta love eggnog or have folks who love eggnog, but if you love eggnog...

You Will Love This Pie.

And it's easy. I mean REALLY easy....  I used a frozen pie crust. (I always make extra and freeze a few, wrapped individually and tossed into a freezer bag) I thawed it, rolled it out, pricked it with a fork,


 and baked at 450° for about 8 minutes....



Now the filling.... This is nice and easy and delicious, it's basically a custard pudding made on top of the stove. It takes about 6 - 8 minutes to cook, stirring. I find having a novel on hand to read while stirring helps keep me from walking away and burning everything...

FILLING:

4 Tablespoons butter
1/2 cup corn starch
1 cup sugar
3 cups eggnog
1 cup milk
4 egg yolks

Melt butter in 3 or 4 quart saucepan. Mix corn starch and sugar together in small bowl. Remove butter from heat, add the cornstarch and sugar mix. Mix together. Add eggnog, milk and egg yolks. Whisk together, heat to boiling over medium heat, stirring regularly.


Pour eggnog custard into bowl, refrigerate until chilled through. (Usually 3 hours or so).



Whipped cream topping:

2 cups heavy whipping cream
1/2 cup sugar

Put in big mixer bowl, beat on high speed until stiff peaks form.

Once chilled, spoon custard into cooled pie shell.


Cover with whipped cream. Keep cold until ready to serve.



This is amazingly delicious!!!!!  A toast to happy holiday celebrations and once-a-year delectables!


And this is a look at my TWINKLE LIGHT FRENZY!!!! Twinkle lights are fairly cheap. I love them. Little kids love them, too! This puts me and the little kids on the same page, right?

So while I'm focusing family on faith, hope and love, on a baby, born to the poor, I'm making sure my twinkle light stash brightens the long, dark, northern nights... I love that the shortest days of the year are cheered by the joy of Christmas lights!

I love preparing for the holidays, but not in the frenzied fashion I used to employ... in a simpler way, but with twinkle lights!

    1. This pie is to die for. It's rich, so small slices work. And I think it would be great with cocoa dusted over the whipped cream, or crushed nuts, because that would blend nicely. Maybe both????? Absolutely delicious!

  2. Oh, I know I'm going to LOVE this pie!! I can't wait to try it. I've never pre-baked a crust before. This looks so easy!

    I love the lights, too. And your manger scene. Very cool to have it for so long!

    1. Missy, sometimes those old things are the best, aren't they? Each time I set them up, I think of doing it with the kids as teenagers and little ones. Of telling the story of that long trek to Bethlehem.... of discomfort and sacrifice.

      Of course they were probably just hoping I'd hush up and give them COOKIES!!!!!! :)

  3. The pie looks good, I never thought about an eggnog pie, I hope to try it in the next few weeks.

    I love that you use the Santa/reindeer from your family. I have a few family ornaments, they really bring back the memories.
    I love your nativity too. It's so special being bought with love. I have some things like that, bought by my kids with what little they had.

    btw: I got all sentimental mushy over Finn (and kids) on FB today, just a warning from one grandma to another :-)

    1. Aww.... I get sentimental, too. I had to have Beth and Mandy help sort pictures last year because I REMEMBER EVERYTHING!!!! Memories aren't conducive to sorting, LOL!!!

    I'm making this one. I don't know when, but I'm making it.

    I'll send you the bill for the larger size pants I'm going to have to buy ;)

    And I love the twinkle lights. We use a combination of colored and white lights on our Christmas tree. I love the glow!

    1. Jan, twinkle lights are so stinkin' sweet and pretty and they make me smile. If this was a Mastercard commercial, that smile would be "Priceless!"

  7. Just have to let you know, I've made this pie several times and always get so many compliments. (I add 1/2 cup rum when I add the eggnog.)
