Revisiting a Fave - Strawberry Spinach Salad

Since we're into the dog days of summer, I thought I'd repost a favorite salad of mine. Last time I shared it was right after our youngest daughter's bridal shower, hence the fancy pictures. But this salad is a treat, no matter what the occasion. 

Here's what you'll need:
  • One 10-12 oz package baby spinach
  • Half a small red onion, thin sliced
  • 1/2 cup sliced almonds, toasted
  • Blue cheese crumbles
  • Sliced fresh strawberries
  • Your favorite red wine vinaigrette
Toss together the spinach, onion, almonds, strawberries, and blue cheese. Add 1/4 cup of dressing and toss again, adding more dressing as desired.

This looks really impressive served in a pretty bowl. And the only thing better than impressive is impressive, easy, and yummy. And this recipe has it all.
Plus it's a great way to beat the summer heat. No cooking involved. You know it's hot when you get out of the pool and you're sweating.
We take in stride, though, and savor the air conditioning.

    1. Ruthy this is my dining room, however the pic was from a bridal shower over two years ago. It has not been dusted since. My theory on dust is this, if you don't touch it, they'll never know you haven't dusted. But as soon as somebody runs their fingers through, then THEY get to dust it. 😋

  4. Mindy, that looks delicious. The combination of tastes intrigues me. I may just have to give this a try.

    Ruthy, I just discovered the most delicious multigrain baguette at our farmers market. Must not go back. They have pies and bread. That's what I notice. Other people look at the vegetables first.

    1. Mary Cate, it's that combination of flavors that makes this so good. A little sweet, a little salty. That always ranks in my book.

      Yep, I'd gravitate to the breads over veggies, too. Then I'd feel guilty and end up buying the veggies. Sigh.

  5. I love salads like this! I need to put strawberries and fresh spinach on this week's grocery list.

    And how do I beat the heat? I live in the north :) But August is August the world 'round (except in the southern hemisphere), and we're supposed to have highs in the 90's for the rest of the week. I'm turning on the AC.

    Go ahead, call me a wimp. I'm working on a deadline and I want to be comfortable!

    1. Wait a minute, Jan. You wait until it's in the 90s to turn the A/C on? Man, if it's over 80, I'm turning it on. Especially at night. I want it cold. Of course, up there y'all cool down at not. We stay hot. It was 87 at 6 o'clock this morning. Yuck.

  6. Today is actually a little break from the stifling heat and humidity. It's only 86 degrees right now.

    I love this salad! Have had it at luncheons but never tried making it. Thanks for sharing again!

    1. Our humidity shot up today, Missy. Luckily, it's supposed to be short lived. Cold front will knock temps back into the 90s. Time break out the jackets. :P

  7. I love this kind of salad too -- usually make it with mandarin oranges though. Don't always think of strawberries -- or maybe it's that fresh ones are so fleeting up here.

    We're in a blessedly cooler stretch now. I so could not live in Texas. How did those pioneer women do it with all those petticoats and corsets and all. I shudder to think about it.

    1. Kav, I can't tell you how many times I've wondered the same thing about those pioneer women. I think I'd have had to hang out in the creek all day.

      I wonder how this would taste with the mandarin oranges? Specifically the mandarins with the blue cheese. Is that the kind of cheese you've had with them? Opinion?
