Fudge on a Diet? Yes, you can!



Jan and I must be on the same wavelength this week, because I'm here today with yet another Trim Healthy Mama recipe.

It's low-carb, sugar-free and, best of all, it's chocolate!

Chocolate aside, though, one of my favorite things in the whole world is peanut butter. If I were stranded on a deserted island and could only have one food, I would probably pick peanut butter. I can hardly go a day without it.

The only thing better than peanut butter would have to be chocolate and peanut butter together.

Yum!




So finally, after almost a year on the THM plan, I tried their Rich Chocolate Fudge recipe, and you know what? 

It wasn't bad.

Oh, and did I mention how quick and easy this recipe is?

Here's what you'll need:
  • 1/2 cup (one stick) of butter (yep, that's the real stuff, not margarine)
  • 1/2 cup natural, no-sugar-added peanut butter
  • 2 oz. 1/3 less fat cream cheese
  • 4 Tbs. cocoa powder
  • 6-10 tsp. Truvia, just depends on how sweet you like it


Melt butter and peanut butter in saucepan over medium heat.

Almost there.

Once everything is melted, remove pan from heat and stir in cream cheese.
I cut mine into chunks so it would melt faster.

Stir until well blended. I actually switched to a whisk.

Add the cocoa and keep stirring.

Now add your Truvia to taste. I added about 7 1/2 tsp,
and stir, stir, stir. 
I was trying to get the Truvia to dissolve, but it tends to be a stubborn creature. Next time I think I will run it through a coffee grinder to make it more powdery.

That's it. Now simply pour the mixture into a wax paper lined, small baking pan.
That is, if you have wax paper. I ran out, so I used foil and sprayed it lightly with Pam.

Place pan in freezer for fifteen minutes (longer, if you desire), then cut into bite-size pieces.
Store in refrigerator or freezer.

The result.
Think dark chocolate fudge. And though it was a bit grainy, it satisfied my sweet tooth. And let me tell you, I've got a big one. However, if you eat too much, it will begin to taste weird.

Do not ask me how I know this. 

Actually, it wasn't peanut-buttery enough for me, so I think I might spread a thin layer of peanut butter on top. You know, frosting. ;)

And then we kept the granddaughter so her mama and beau could paint the town red.
They had a wonderful time.

  1. I wonder how that would work with almond butter. Yum. They say that you lose the taste for and of something after three bites. I am glad that there is an internal brake system.

    For Valentines, I got a new car to replace my fifteen year old one so I can cart the grandkidlets around better. Nothing more romantic than a man giving up his dream truck so his wife could have a CRV.

    1. LOL! I saw that on FB, Julie, that you had gotten a new car. Hard to top that gift. It sure is a beauty, though.

      Three bites, huh? I hadn't heard that. Good to know.

      As for using almond butter, I don't know. You'll have to give it a try and let me know. I bet it would be good. What's the texture like of almond butter? I know my natural pb is much thinner than regular peanut butters. Hmmph. You've definitely got me thinking.

  2. I've seen pictures of this fudge on my Two Grand feed, but haven't tried it yet. I'll have to this week!

    I've started using straight stevia instead of Truvia. I love the Truvia, but it's a bit spendy when you want to use it for baking. But the stevia has its downside, too. It doesn't take much of the fine powder to be too much (1/32nd of a teaspoon = 1 teaspoon of sugar or Truvia), and too much stevia is terribly bitter. I usually sprinkle, taste, sprinkle, taste.

    We celebrated Valentine's Day in our normal, quiet way. Hubby and I spent the day at home, not fighting the slippery roads. We'll go out to celebrate with a drive up in the Hills and a stop at our favorite restaurant when the weather clears up a bit. :)

    1. Jan, so far I haven't really deviated from the Truvia, however I just ordered the Sweet Blend from THM and am looking forward to trying it out. I'll keep you posted.

      Yeah, hubby and I gave up on going out for Valentine's Day a long time ago. When the kids were little, I used to fix a special dinner for him and I, allowing the kids to eat pizza in front of their favorite movie so Dad and I could be alone. Now it's just whatever. ;)

    2. Just to warn you - the sweet blend is a lot strong than the Truvia. I end up using about 1/2 as much - so about 1/2 teaspoon instead of a packet of Truvia.

  3. We kind of ignore Valentine's day on purpose, but we did have a nice dinner after Mass and that was wonderful!

    I'd much rather be surprised by the occasional (or more than occasional) bunch of flowers and a sack of chocolate or PayDays. (I love PayDays!!!) I saw Julie's present, and I laughed... I'd most likely kill Dave if he went and did that without me, because I like picking my own cars and yes, I'm controlling when it comes to 5 digit purchases.... but it's cute as can be and we're looking at replacing the Cruze with something bigger because it's tough to get three kids in the backseat with the car seat rules up here. Julie's rules are different in NC, but I totally understand needing room for the kidlets!

    And I love being a grandmother with kids in the back seat! Julie, does the CRV you got manage three car seats in the back seat or two?

    Fudge.... Oh, Mindy, I love fudge. I just love it beyond almost life, and this looks marvelous! Thank you for sharing!!!

    And what a beautiful couple! Love it!

    1. Ruthy, for a non-chocolate treat, PayDays are the bomb, aren't they? Love the smooth, the crunchy, the sweet, the salty... And I laughed at SACK of chocolate. No bars for this girl. Give her the whole sack. ;)

      You know, when my oldest was born, car seats laws hadn't taken affect yet. I remember my MIL poo-pooing taking the car seat when she took my infant daughter home with here. Said she'd hold her in her arms like she used to do her kids. I have no idea what I was thinking when I smiled and said, "Okay." Personally, I think car seats are a blessing because it keeps the kiddos out of your hands/reach. Definitely a blessing on the rare occasion that one decides to pitch a fit.
