Brie, Wonderful Brie...

I love brie. So smooth and creamy. Yummy alone, on a cracker or paired with fruit. You can bake it, turning it into ooey-gooey, delectable deliciousness as Jan did here. I like to put a round on a parchment-lined baking sheet, drizzle it with honey and then bake it. 

Pure heaven.

Then I saw this recipe from the Pioneer Woman.

Be still my heart.

Brie and mushrooms? Together?

I can hear the angels singing.




I gave you a little teaser on this last week by showing you this picture.

So today, you get to find out how to make this yummy appetizer, just in time for the big game.

In addition to 8 oz of brie, you will need 1/2 a stick of butter, 12 oz white button mushrooms, stemmed and washed (I had baby bellas, so that's what I used), 4-5 green onions, sliced up to the middle of the dark green part, 4 garlic cloves, minced, 1/4 cup chopped fresh parsley (I didn't have any so I used a couple of teaspoons of dried parsley) and a splash of chicken broth or white wine.

 That's the full recipe. I only had 8 oz of mushrooms, so I adjusted my measurements accordingly.

Preheat your oven to 375 degrees.

Now I prefer to get everything chopped and ready, so when it's go time, I can throw everything together. That's one of the things that makes this a great party dish.

Cut the brie into bite size pieces. It's up to you if you want to leave the rind or remove it. 
I've done it both ways.

Green onion and garlic are ready.

Now it's go time.

Melt your butter in a large skillet over medium-high heat, then toss in your mushroom caps and move them around a bit, making sure to coat them with the butter (about a minute).

Remove mushrooms from the skillet and set aside.

Add the green onions and garlic to the pan and saute for a minute. 

Add the parsley and a splash of wine or chicken broth and cook for another minute or two. 
Don't worry. This is only for flavor and a little moisture. Any alcohol cooks out.

Place the mushroom caps in a baking dish and add a chunk of brie to each one.
Kind of like filling belly buttons.

Then spoon the onion/garlic/parsley mixture over the top.

Bake 15 minutes, or until the cheese is melted.

And serve.

Preferably warm.

There go those angels again.

Now if you don't like mushrooms... I'm sorry. I've got nothing for you.
Okay, you can have any leftover chunks of brie.

About that "big" game. For me, it's rather anticlimactic this year. I have no reason to cheer for either team. I mean, yes, I like the Cowboys, but I also like Aaron Rogers and Payton Manning. Those guys would give me a reason to cheer. But alas, twas not to be this year.

SIGH.

So now our big game party watching will go something like this:

Chatter, chatter, chatter, chatter, chatter...

Shhhhhh.... Hush, y'all! The commercials are coming on.

Save for the sound of the television, silence filled the room. 

Honestly, I'll probably sit this one out this year. That is, unless we decide to go to one of the parties we've been invited to. In which case, it's more of an excuse to fellowship. And let's face it, you can never get enough of that.

  1. I'm dying here. So wonderful. I love Brie too and even have found a goat's milk Brie at Trader Joe's that is fabulous.

    My favorite way to serve Brie is to put it in an omelet and put my triple berry sauce over the whole thing.

    We used to be big into the parties but now we just leave that to the younger crowd and make our own party. Fresh French onion dip, buffalo drummettes, crudites, and chips. We don't even think about a cute dessert. Sigh.

    But I am for sure adding these this year. All for me.

      And yes, since ManO doesn't like mushrooms or garlic (what is wrong with that man?), you can make a smaller batch like I did. You'll be so glad you did.

      It's a sign. But I just reread and realized you used the sentence, "like filling belly buttons" and I wonder what kind of life you have led!

  3. We have day care families over for a typical Ruthy-loves-crazy-kids fun. Some of them have aged out of thinking it's cool to come to my house -- What are they thinking?????-- but we'll have a fun crowd of little and medium and big kids and delightful parents and football and food and football and food.... And everyone goes home at half-time.

    1. Well, let's face it. The big game is really just an excuse for a party and that's just so we eat all that food. Right?

      I bet you all have a blast. You'll have to be sure and share pictures of your spread, because I'm sure it will be traditional Ruthy awesomeness.

    2. Gosh, we do have fun. Before we had the new family room, the middle-aged brats would take over the 13" tv in the attic for Puppy Bowl and Kitten half-time show! :) THIRTEEN INCHES and they thought it was wonderful because I let them take food up there!!! So funny!

      It is fun and just long enough so I don't kill anyone. Always a plus!!! :)

    3. Oh, I love the puppy bowl. And I can't wait to see how Maddie reacts. I've often seen her stop and watch when there's a dog on TV, so this should be interesting.

      And hey, it doesn't matter what size the TV as long as it's tuned to something the kids like. Throwing in food is just a bonus. ;)

  4. Uh...what big game? Impatient toe-tapping. Seriously, how long is the football season anyway? We're in the middle of winter. Hockey has taken over the airways and jumbled up with all the football coverage that means the rest of tv land is frozen in time. LOL.

    Actually, I'm not as grumpy as I was, after being able to watch my sport of choice, figure skating, this weekend. I got to watch both the US and Canadian nationals. I was in ice heaven. :-)

    But back to the food -- This mushroom recipe looks amazing. I need to branch out in my cheese selection. I always fall back on the tried and true cheddar and mozzarella.

    1. LOL! Yes, Kav, the football season will finally bid us farewell this Sunday. Then armchair quarterbacks all across America will left to figure out what on earth they're going to do with their Sunday's.

      I saw that figure skating was on Sunday, but didn't watch it. Anyone worth watching? Any up and coming stars?

      So are you telling me you have not had Brie or just don't buy it?

    4. Missy, I know the feeling. We only have one television but there are times I want to lobby for two. Football season is one of them. But then I just sit on the couch and read a book and cheer at appropriate moments.

  5. I had to laugh at your description of your Super Bowl party. With no dogs in the hunt, the game isn't as important :) But the commercials are always fun.

    This recipe looks fabulous! I'm severely tempted to head out to the grocery store RIGHT NOW and pick up the ingredients to have for lunch! Pair this with a nice salad??? Now who is in no-carb heaven???

    Actually, our Super Bowl plans this weekend are meager. The game comes on at 4:30. I watch the first hour or so, and then we go to the evening service at church (yes, we're Presbyterians. Sunday means multiple services - "a holy resting all that day"). And then if I feel like it, I'll watch the last bit of the game after we get home. But I don't mind missing the bulk of the game - - when the Broncos aren't playing. If they are playing, I make sure I record it!

    1. Jan, I had these for dinner one night when my guys were gone last week. Like you said, pair it with a salad and you're good to go.

      You know, you may be on to something. We could just record the game then watch it later. Simply fast forward through everything but the commercials so you're on top of things when people are talking about them the next day. You could do that after church. :)

    3. Tina, I still have kids at home. There's no such thing as an uniterrupted day of writing. However, give this writer a round of brie and some dark chocolate, and there's not telling what I could conquer.
