Lunch on the Go

Don't you just love those moments when you look up and see something incredible. Something unexpected and beyond description. Something that could only be created by the hand of God.


This was the view from my Walmart parking lot the other day.
It was breathtaking, I just had to snap a pic. 
Even bordered by the ugliness of humanity, God's majesty shines through.

You go, God!

So last week I was looking for a quick lunch. I reached for the Joseph's pitas and was going to make my usual wrap with lunch meat, cheese and broccoli slaw, until I opened the refrigerator. 

There it was.
Leftover barbecue from dinner the night before. And just enough to make a hearty lunch.

First came the pita.
You've seen these before. Know that Jan and I swear by the Joseph's pitas and lavash.

I top my pita with the remainder of the shredded beef.

Then I add all the stuff I'd normally eat with barbecue.
A little onion, some jalapenos... I left off the pickles.

And I can't forget the sauce.

Roll it up and away you go.
For me, that means back to my office.

This was such a treat. Satisfying and delicious, and you know those are my two requirements.
Of course, the bonus was that it was quick. I simply threw it together.

Okay, so let your imagination roam.
What might you put on a no-guilt, totally delish Joseph's pita?

  1. I'm going to have to get the pita bread and the lavash! That looks marvelous!

    But that sky, oh, mylanta, Tex, that sky?????? Gorgeous, marvelous and magnificent! So blessed!

    Summer is ending here, school is starting, and that means back on the wagon for me. I've indulged in visits to Abbott's Frozen Custard, I've been busy writing (burning NO CALORIES) and helping on the farm and yard (burning some calories) and doing "drop it all and dance" workouts with the kids, but that's not enough to negate my food intake!

    sigh..... :) But I have three bags of broccoli slaw, chicken breasts and fresh veggies, so I'm ready to rock and roll the fall! Thank you for this awesome, quick idea!

    1. Can't go wrong with chicken breasts and broccoli slaw, Ruthy. Endless possibilities. Endless DELICIOUS possibilities. But the custard is a fun summer treat. We must allow ourselves to indulge on occasion, otherwise we'd go mad. :)

    Hmmm, thinking you don't mean Naam. I love Naam.
    Naan or nan or khamiri is a leavened, oven-baked flatbread. It is typical of and popular in West, Central and South Asia.

    My go to lunch is a Safeway salad of spring greens, walnuts, cranberries, feta and tiny flat bread pieces. I add garbanzo beans and lite ranch dressing. I keep about six in the fridge at all times as I can grab for work.

      The lavash is not crisp. It's nice and pliable. You saw what Jan did with it on Monday.

      Love your salad combo. Save for the garbanzos. And grab-and-go is always a bonus.

Mmmmm...for me it would be this bean thingy I make -- black beans, onions, garlic, yellow pepper, a wee bit of tomato paste and a bit of veggie broth with mustard seeds, smoked paprika and cumin for seasoning. Simmered until most of the liquid is gone. And then topped with guacamole and sour cream. Gulp. I'm hungry and I just hate breakfast!!!!!

  5. Hi Mindy~
    I have been using Joseph's Pitas for a few years and they are a great way to have "bread" without the excess carbs. I've never thought to put BBQ on one, thanks for the idea.

    I've had lots of things that were good on the pitas.
    A burrito wrap, egg salad and chicken salad are some favorites. Grilled chicken on lettuce greens with some almonds slices and Annie's Asian Sesame Dressing is a Tropical Smoothie do-over that's yummy. I prefer the pitas warm or even toasty on anything I use them for. I think the flavor is just better when they're warmed. I've bought the lavash, they are good when you need to roll things up tight but I think the pitas have more taste.

    I've heard you can slice them up with a pizza cutter and bake into chips but I haven't tried that one yet.

    I'm back on the wagon along with Ruthy, so the pitas will be back full force! and having more salads for lunch like Tina.

    Oh btw Mindy, I bought The Doctor's Family Reunion and am half way through, it's really good, feeling all those emotions like Mary described in her blog post today!

    1. I missed Jan's post Monday but went back and read it after you mentioned it. That.s another yummy recipe.I see you and Jan agree the pita's are the best. Jan's right the flavor is in the ingredients you PUT IN THEM. As you stated, there really is no limit to what you can make with these, going to get more creative.

    2. Ooo, Tracey, your Asian version sounds fabulous. Must try that. Especially with the crunch of the almonds... YUM! I love all the different textures.

      I'm like you, I prefer the flavor of the pitas, but the lavash comes in handy sometimes. And I've wondered about baking the pitas for chips. The edges do crisp up nice for pizza, so I bet they'd do well. Will have to try that, too.

      They are definitely a good bread replacement. I'll take a half and spread natural peanut butter on it for a snack. Get my protein and my daily PB fix. :D

    3. Mindy, I found the lavish bread at our grocery store with the tortillas that I get. But each piece is considered two servings. So I figured the pita would be easier to use. Do you ladies cut the lavish bread in half when you use it??

    4. Yes, the lavash is supposed to be cut in half. Good thing, too. That would be one huge wrap. ;)

      Like I said, sometimes they're out of the pitas, so I have to go with the lavash, but I prefer the pitas for my wraps. However, I still plan to try Jan's recipe from yesterday.

  6. Pizza. Hands down. The pitas make the best light pizza crust for a quick one-person meal!

    But anything you can wrap up goes in a pita. Just sayin' :)

I'm back on the wagon too ( not that I was ever in the wagon for long) but my blood work is off..ac1 at the border, cholesterol, triglycerides, liver stuff..has ultrasound this morning but no results yet. She thinks fatty liver and that means losing weight and eating good. Anyways couldn't find Joseph's at the better walmart near my dr all they had was Italian seasoned flat out bread so tried a wrap like yesterday..first attempt fell apart but 2nd try with a little less filling worked and was pretty good! Cooked chicken breast with jarred pepperoni s and some juice and some sweet peppers.cold stuff was leftover guacamole. Tomato and this baby kale,chard,slaw mix I found at Wally World then rolled up and browned a bit in olive oil in skillet. Think olives would have been droid and wanted to add chick peas but not enough room and didn't want a ton of leftover chick peas

    2. I hate to hear that, Susanna. Praying all tests come out normal. If not, though, I can't recommend Trim Healthy Mama enough and I'm sure Jan would agree. Still allows you to feel like you're indulging even though you're losing weight AND you're healthy.

      Yeah, getting the hang of rolling those wraps is a challenge. Just takes some practice. I've also found that sometimes the pitas are drier than others and then they want to split when I'm wrapping.

      I know that the Joseph's sometimes goes fast at my Walmart. I've seen the FlatOut brand, but it's higher in carbs, so I tend to avoid it.

      Love your wrap, though. Sounds absolutely yummy.

    3. Well I have to go see the gastro dr for more tests. :-(. Mild liver enlargement and fatty liver, first appt was oct 5 but nurse fit me in sept 15. Cold have done next tues but already gonna be on nights and she said to didn't look too alarming but with the elevated liver counts it was still something to get checked out. Told me to eat low fat and no alcohol...I don't drink but darned if this doesn't feel like a time to start and I can't have any lol!
      The wrap was good took a too brief nap but amazingly I still don't feel too hungry nd it's been close to 4 hrs since I had the wrap. Guess I got the right amount of protein, carbs and fat though it was pretty huge. Will keep looking for Joseph's maybe Kroger has them they're better than Randall's for healthy stuff. Do they freeze well and thaw out ok? If so might stick a few packages in my freezer since Kroger is a bit out of the way. These for out ones are delicate I know that! Tear easily but I used to eat them with 2% mozzarella and turkey pepperoni nuked and rolled up

    4. Yes, you can freeze them, Susanna. As a matter of fact, that's how they come to Walmart. I've grabbed them before when they must've just taken them out of the box.

  8. Was just about to head do something similar! I think I'll have ham, cheese, mayo, lettuce and mustard. Oh, and tomato if it's still good. :)
