Don't you just love those moments when you look up and see something incredible. Something unexpected and beyond description. Something that could only be created by the hand of God.
This was the view from my Walmart parking lot the other day.
It was breathtaking, I just had to snap a pic.
Even bordered by the ugliness of humanity, God's majesty shines through.
You go, God!
So last week I was looking for a quick lunch. I reached for the Joseph's pitas and was going to make my usual wrap with lunch meat, cheese and broccoli slaw, until I opened the refrigerator.
There it was.
Leftover barbecue from dinner the night before. And just enough to make a hearty lunch.
First came the pita.
You've seen these before. Know that Jan and I swear by the Joseph's pitas and lavash.
I top my pita with the remainder of the shredded beef.
Then I add all the stuff I'd normally eat with barbecue.
A little onion, some jalapenos... I left off the pickles.

And I can't forget the sauce.

Roll it up and away you go.
For me, that means back to my office.
This was such a treat. Satisfying and delicious, and you know those are my two requirements.
Of course, the bonus was that it was quick. I simply threw it together.
