Chicken 'n' Bacon Lavash Rolls

I can hear all of you saying, "What in the world is a Lavash Roll?"

This was something I've been introduced to since starting to eat the Trim Healthy Mama way.


These are available at Walmart or almost any other grocery store, usually in the deli section with the other specialty breads. They're great because they're LOW carb, LOW fat and HIGH protein :)

And if you've ever been on a lower carb diet, you know one of the big challenges is finding something close to bread that you can eat and not blow your diet. These can be part of your answer.

I love these as crackers. I take half of a square, cut it into cracker sized pieces, lay them out on top of a microwave safe plate lined with a paper towel or parchment paper, and microwave for a minute. Top each cracker with a smear of peanut butter....

Just a minute - it's time for my afternoon snack. I'll be back in a jiffy!

Now, back to the Chicken 'n' Bacon Lavash rolls!

These are super easy.  Preheat your oven to 375°.

First, cut a small chicken breast and two slices of bacon into small pieces, then cook them together with some onion and seasoning until the chicken and bacon are both done.

I used this seasoning -


But you can use whatever you have on hand.

Spread a piece of Lavash bread out on a baking pan lined with parchment paper. Pile the chicken and bacon in the middle, and top with shredded cheese. I think I'm going to add some cubes of cream cheese along with the shredded Colby and Monterrey Jack cheeses next time.


Fold the long edges in...


...and roll up, making sure the seam is on the bottom when you're done.


Sprinkle the top with a little cheese... (I forgot to brush some olive oil on the top - it really makes a difference!)...


...and bake at 375° for 12-15 minutes, or until the cheese is all melted and the bread is slightly browned.


Cut in half, and enjoy!


One great thing about this roll-up is that you can use whatever ingredients you want. I also love it with ground beef, cream cheese, onions and peppers to make a Philly-style sandwich.

Or you can use scrambled eggs, sausage, cheese and salsa to make a breakfast burrito.

Or...well, use your imagination (and the ingredients in your refrigerator!). Have fun!

    I want to lick the screen and I abhor low carb bread products. This looks fabulous.

    1. I've never liked low carb bread, either. It's one of those things like fake meat for vegetarians, isn't it?

      But these lavash wraps are different. Their flavor is pretty bland by themselves, but they act like a tortilla - and what you taste is the filling. The wrap adds fiber and protein, but you're really going for whatever goodies you're stuffing inside :)

  2. You have read my mind that I need to do some low-carb seriousness right about now!!!! I would do this and serve it (to me!!!) on broccoli slaw instead of the low-carb bread but I get that not everyone has fallen in love with broccoli slaw like the Ruthmeister Meisterberger! I love the Trim Healthy Mama mindset. Go you!!!! I was the beneficiary of TWO boxes of chocolates and fudge this weekend. I shared one at our coffee hour after Mass, but the other one is taunting me from the counter. I promised myself that tomorrow I celebrate the end of summer with low-carb for a month or so to fit back into my pants with cooler weather coming, but that means I have to work on a cookie recipe for the wedding trilogy TODAY... only it's hot today. We'll see how that all works out! Jan, thank you for this, I love piling things together and then eating them! And now I'm going to check out lavash bread.... or serve it on crunchy salad stuff (which I had Dave buy yesterday so I have no excuses tomorrow! Candy goes in the freezer and Ruthy eats rabbit food.)

    1. G-r-o-a-n-n-n.... We just got back from an 8 day tour around the midwest last night. Eight days of eating delicious - and NOT trim healthy mama - meals.

      Eight days of riding in the car. And sitting. And sitting.

      I love our semi-annual trips to visit family, but when I get home I feel so sluggish and bloated.

      Back to no sugar, low carbs and healthy fats starting this morning.

      Although the fresh peach pie from Das Essenhaus in Middlebury, Indiana was fabulous. I'll just have to live on the memories :)

  3. Haven't seen Lavash bread up here but I don't frequent Walmart. They tend to be in the suburbs and I'm not. Too many bus connections to get there. We do have a really old one in town but it doesn't carry much in the way of food. I love wraps though...love the variety of them.

    And speaking of peanut butter you guys here at the café have renewed my love of peanut butter. It's been years since I had it because my daughter developed a nut allergy and I never had it at home but now that she's moved out...blissful sigh. It is good, isn't it? And the coffee shop she works at makes to die for peanut butter cups with a shell of crushed chocolate cookie wafers and melted chocolate. Of course, she can't have them so whenever they have extras at the end of the day guess who gets one? Yum.

    1. You can try looking for the Lavash bread at other stores. We're at the end of the distribution points, and our Walmart just started carrying them. The other stores haven't caught up yet!

      And I'm drooling over your description of those peanut butter cups!

  4. Urgent baking question. I found a great zucchini bread recipe on the Mennonite Girls Can Cook website but it calls for buttermilk. Can I use ordinary 2% milk instead? I have all the other ingredients but buttermilk and wanted to bake ahead for the work week.

    1. I hope you get this reply in time!!!

      You can use sour milk instead of buttermilk. Sour your regular 2% milk by putting a little lemon juice or vinegar in the bottom of your measuring cup, and then add the milk to the amount you need.

      1/2 teaspoon lemon juice to 1/2 cup milk
      1 teaspoon lemon juice to 1 cup milk

      This is the way I've always done it!

  5. I love lavash. I live in an area with a bazillion Middle Eastern restaurants because most of the town is Armenian. It is delicious and you can even make Lavash bread pizza. For only 190 calls. ( I can't eat it because I'm actually trying to gain weight. 190 is way too little.)

    1. So you can eat three or four of these, right Elizabeth?

      But this is so filling, I have no idea how anyone would be able to do that!

      An alternative would be to fill them up with tasty, hi-calorie goodies :)

  6. Jan, I am all over this recipe. You know how I feel about the Joseph's products (which I'll be talking about tomorrow, too) and the lavash is only second to the pitas in my book. And this recipe looks DIVINE! Something I could really sink my teeth into. Major Y.U.M.
