Make it at Home: Chipotle Burrito Bowl with Tina Radcliffe

I love Chipotle’s Burrito Bowl, and I have discovered how to make it fast, healthy and delicious at home.

This recipe is for two. Double or triple as needed.

Ingredients:

I used 1 large chicken breast, but I have also used steak and you vegetarians can use cubed zucchini and strips of fresh red onion. I’m sure shrimp would work and pork.




Pinto or black beans (I like black beans, hubby likes pinto so we open both)
Pico de Gallo  
Prepared guacamole
Sour cream
Grated Pepper Jack Cheese
Minute Ready to Serve,  Brown Rice –one cup serving per person (each package comes with two serving size cups)
Chopped romaine or bib lettuce- optional.
Chips and salsa on the side-optional.



Sprinkle the chicken on both sides with Taco Seasoning and then grill the chicken. I use a Hamilton Beach Indoor Grill because it’s still 106 degrees here at dinner time.

While the chicken is cooking to 180° (per cooking thermometer), prepare your ingredients and heat your beans.

Chop the chicken into nice ragged squares. 



This is half a chicken breast. Plenty for one person.
Heat the rice for 90 seconds.
Add one rice container to your bowl. Then add beans of choice and top with chicken. Then I let everyone add the toppings themselves. You can individualize this with your family’s favorite toppings.



This is absolutely delicious and good for you as well.

  2. Hey I DID Rread the first book just didn't make the jump from doctor to rancher even though the cowboy books heroine was on a ranch..well her dad was the jerk.
    Anyways this looks good and similar to what I call a fajita salad only lettuc stuff instead of rice there. I love those brown rice bowls but the next door grocery store never has them so I have to rmemenber to go down that aisle when I'm at Wally World which isn't often. Sigh. Last time I got the old fashioned kind and yep it's still sitting on the counter staring at me like I should know its fun to hang by the kitchen waiting for rice to cook

    2. that's because it IS impossibly tedious- and just tastes like rice when you're done! rice always needs help from other foods.

  3. We LOVE the burrito bowl at Chipotle!! My favorite part is the lime and cilantro rice. My daughter just found a recipe last week, so I'll make that soon and share.

  4. BTW I'm also going to check out your indoor grill. I think my grill is too rusted out inside. I couldn't get it to light last time I tried. I hate that. I had bought one that was mostly stainless steel to try to avoid the rust. It did last longer. But I guess Georgia humidity is just too invasive.

    2. LOL, Susanna. Isn't that the truth?! You know, this one made it 3 years I think. Maybe 4. So I guess it was worth the extra expense. And the stainless top looks great! But the insides are crumbling.

    3. Indoor grills save lives. The plates come off this one. We cook dinner. I fill a sink with water. Dump them in when I finish and by the time we finish dinner they are clean. I also cheat (yes a pattern with me) and occasionally toss them in the dishwasher.

  9. I make a mexican bowl variation of this every couple of weeks. So easy and so good. I've never tried the minute bowls before, do I have to admit I do rice the old fashioned way? If I start it first, then by the time I've prepared my meat and other ingredients the rice is ready, not so hard, it's just timing. I've never found a prepared guacamole that isn't loaded with so much garlic I couldn't taste the avocado, so hubby likes to make this himself, team work.

    I also do an asian version of this using sesame oil to stir fry my meat and bok choy over rice, yummy. (Bok choys a new veggie for me but Harris Teeter carrys it, can't find it just anywhere)

    Dishes like this really limit time in the kitchen without sacrificing taste, love that!

    it's one of my local grocery stores here in Va. We also have Kroger, Food Lion, Farm Fresh and of course Walmart. We even have some Piggly Wigglys like in Driving Miss Daisy! I don't really know what grocery stores are national? We do have a Whole Foods and Trader Joes, but both are about 30/40 min. drive.

    The thing with the bowls is, just use any ingredients you like, a protein, a veggie and serve it over rice or noodles and you have a meal. The same as what we do with Italian, right?

  12. Exactly. And no taco shell so it's lower cal.

    I am learning Arizona has different stores. Sprouts, Trader Joes and Frys which = Kroger, and Wal-Mart. In Colorado we had Whole Foods and King Soopers which is Kroger. But the Safeway's here are pretty good!

  13. This looks so good. By the way Trader Joe's sells brown rice in the frozen section that you just have to microwave. Its super handy to pull out. Also greek yogurt would make a great sub for sour cream. I do that all the time. This looks like a great clean eating high protein meal.
