Spinach, Egg, and Cheese Scramble

You should know by now that Mindy and I (and Missy?) are on our way to being Trim Healthy Mamas!


And you should know by now that this eating plan isn't all rabbit food and bird seed!

To refresh, here's the main point: don't eat a large amount of carbs and a large amount of fat in the same meal.

Point two: center every snack and meal around some source of protein.

When you have those two things down, then you're on your way to being a Trim Healthy Mama, too.

That is, unless you're a man. You're free to come up with your own terms for the man in your life. "Trim Healthy Man," "Totally Hunky Macho Man," "The Hottest Man." ☺

This recipe is so simple, you really don't need a recipe at all. It's one of my favorite breakfasts, or it also makes a good lunch.

Spinach, Egg, and Cheese Scramble

Ingredients:

Eggs (2 or 3, depending on how hungry you are)
2 Tablespoons to 1/4 cup frozen chopped spinach (or a handful of fresh leaves, chopped)
1 Tablespoon minced onion
1/4 cup shredded cheese
salt and pepper to taste


I keep a big bag of frozen chopped spinach on hand. I use it for tons of stuff. This recipe, a quick side dish, a nutritious addition to soups - you name it!

This is my new ceramic coated pan. The non-stick part is great!

The first step is to start your spinach and onions. Cook them in a tablespoon of coconut oil or butter. I like to use medium heat to give the frozen spinach a chance to thaw before the onions burn. Don't ask me how I learned that ☺



While the spinach and onions are sauteing away, scramble your eggs.


When the spinach and onions are fragrant and tender, pour the eggs into the pan.


Stir and cook everything together until the eggs are done.

Don't add 2 cups of cheese. The package is for
illustrative purposes only.

Add the cheese and stir it all together until the cheese is melted.


It may not be the prettiest dish ever, but it's healthy, quick and delicious!

  1. I love spinach omelets with Swiss cheese. This would work for this recipe. Yummy!

    1. One reason why I love scrambles is that you use the same ingredients as an omelette, but MUCH less work :)

  4. haven't tried adding frozen spinach before- my 'healthy' scrambles usually have onion, bell pepper (both from frozen),olive oil or sunflower or whatever I have that seems 'healthy', and sometimes baby bella mushrooms cut up little bitty and maybe a bit of 2% shredded cheese if I have any. will have to dig through the freezer and see if I have any spinach...
    trying to get healthy myself- stress from work is making me sick :-( already been to the doctor and she said she thinks all my symptoms are stress related and that exercise would help so I started back with some exercise yesterday morning. Think I'm gonna go live with Virgina - you're Oregon right?! - I was doing a virtual active 'hike' - designed for treadmill but I used floor and rebounder/trampoline and did hikes in the Pacific Northwest..sigh...I want to live there!

    1. That virtual hike thing sounds fabulous! So much more fun than "hiking" in your living room :)

      Sorry about the stress. It's amazing how that can creep up on you and affect all areas of your life.

      And your egg scramble sounds fabulous. The bell peppers would add a wonderful kick. And I add mushrooms whenever I have them, but they've been so expensive around here!

  5. Love this breakfast! I do something similar often! I just make mine as an omelet instead of scrambling. LOVE it!

  6. Yum -- looks good and way less fussier than an omelette. I've never thought of putting spinach in an omelette...er scramble. Will definitely be doing this.

  7. Oh, I love that picture! LOVE!!!!!!! You know, I stay high-protein, high-veggie most of the time and this idea of the omelet, oh, yes... I add broccoli slaw, florets, fresh tomatoes, etc. and I make it double so that when I'm starving mid-afternoon and there are fresh cookies on the table... I heat up the second half of my omelet. Jan this is a great idea, and I love the Trim Healthy Mama ideas.

    Not a diet, because those starve us. Now that we know more about how a body metablolizes foods/proteins/sugars/carbs.... We can be armed and dangerous as the dress sizes shrink! Go us!!!!
