Barbecue Chicken Sandwiches with Mary Connealy

Barbecue Chicken Sandwiches
Faster than Fast Food

with Mary Connealy


Ingredients
one 3.5 bag Bonelss Skinless Chicken Breats
one medium onion-chopped
one 15 oz can pineapple chunks
one bottle barbeque sauce (your favorite flavor)
Dump in this order into a crock pot
cook for four hours
THAT'S IT-IT'S FASTER THAN FAST FOOD



Note the care I take dumping the still-frozen chicken breasts. Be very careful if you attempt this level of gourmet cooking at home. Amateurs bag openers and dumpers could be disappointed in the results.



Chop onion. This is the time sink. I labored over this onion for...just estimating...four minutes.



Dump onion on top of chicken breasts.



Open can (mine had a pull tab, a can opener might be required!) dump pineapple chunks over chicken


Sweet Baby Rays Barbeque Sauce. Yum.
Pour over chicken/onion/pineapple chunks.
Lid. Turn on. Go write your book while dinner cooks itself.

Shred the chicken (I use two forks) when it's tender, then use this for sandwiches. Though the chicken breasts as a meal are yummy, too. But I make sandwiches usually.

 I like to think great cooking isn't about great skill, rather it's about what recipes you select. I like to think that because I'd rather write than cook, buy my husband keeps expecting FOOD! My children were like that too. So I've a stack of recipes with every imaginable short cut in the world. I call it Faster than Fast Food.

With nearly every other man in town married off, Vince finds himself stuck with strong-willed Tina over and over again. Of course, Tina is the prettiest woman he's ever seen, so if he could just get her to give up her crazy causes, he might go ahead and propose. But he's got one more surprise coming his way: Tina's picketing at the saloon has revealed a dark secret that could put everyone Vince loves in danger.

    6. Oh my stars... remember when I said I BURNED a crockpot chicken recipe that looked so easy????? I FORGOT THE BBQ SAUCE!!!!

      I can't believe I did that, but I did!!! I forgot to add that and the whole thing burned and smelled awful and I probably wrote TERRIBLE SCENES that day, too!!!! Ruthy and the terrible, horrible, no good very bad chicken burning day! I can't believe I forgot the barbecue sauce.... AAARRRRGGGGHHHHHHH

  2. Never mind cooking -- I didn't know that Stuck Together came out in June!!!! I thought it wasn't until the fall. That's made me the happiest happy dancing Canadian in the country right now. It's like in two weeks!!!!! Yeehaw!!!!!!!

    3. That's because Parables is awesome. I live in the Hampton Roads area and have not found a Christian bookstore comparable to it. I have fond memories of making the drive to Omaha just so my daughter could enjoy browsing through the books there. :)

    4. Unknown, the Parables in Omaha is so so good to me. They've got about a two foot stretch on their shelves of my books. And when I stop in they always talk to me SO NICE.

  3. I love my crock pot because of recipes like this one. Dump, turn it on, go. Come back at supper time, and supper is done.

    It's like it's magic or something!

    Although most of my recipes require a little more prep time - this one has practically none (I'm ignoring the chopping onions part.) :)

    This is going on next week's menu!

    2. I made a crock pot roast this week, Jan. Roast, bag of baby carrots. Potatoes quartered unpeeled, onion quartered. That's it. Plug in, turn on and go write.
      Very delicious and the house smells so good all day.

    2. I heard of someone who pours a bottle of Pace Picante Sauce over chicken breasts and turns on the crock pot. I wonder if that, shredded would make good taco meat? Maybe Taco Seasoning Mix. I might try this. Fajita filling!

    3. Yes! I do that! Cook the chicken in the picante sauce, and then taste it. Add some chili powder and/or cumin if you think it needs it, but we don't usually add anything else.

      We use this chicken with flour tortillas to do soft shell tacos. I like mine with lettuce, avocado, more salsa, cheese...and it's on my diet if I use a low-carb tortilla. :)

    4. I forgot to add - you cook the chicken in the picante sauce in the crock pot. The flavors swim together for hours.

  6. You have to shred the chicken (I use two forks) when it's tender, then use this for sandwiches. Thought the chicken breasts as a meal are yummy, too. But I make sandwiches usually.

  10. I love a good slow cooker recipe! But leave it to me to have a question about such a simple recipe...do you drain the pineapple or dump juice and all?
    Baby Ray's sauce is our favorite too.

  11. Donna I've made it with drained and not. Last time I made it I didn't drain and thought the sauce was a little runny. Then we saved the left overs and the next day it was perfect. I just don't think it matters that much. If you're worried, drain the juice and save it then near serving time consider if it needs to be juicier and pour on the juice a bit at a time.
