Potato Bake!

I can't believe I haven't posted this recipe.

I must have.

It's such a family favorite, and I've shared it on Facebook and on my Ruthy's Place blog....

Maybe not here? Because I searched and can't find it, clearly I've been REMISS!!!!!

Because this is like the best-tasting potential heart attack recipe in the world.

We take it for potlucks, we use it for showers, for parties, for family get-togethers, and have I mentioned how much easier these family get-togethers are now with The Room That Harlequin Built????

WHAT A DIFFERENCE WITH A HUGE CREW!!!!!! LOVE IT!!!!!

But back to food!



POTATO BAKE:

1 32 oz. bag shredded frozen potatoes
2 cans cream of chicken soup
1 12 oz. container French onion dip
2 cups shredded sharp cheese
1 stick butter, melted


For topping:

4 cups crushed corn flakes
1 1/2 sticks butter melted

Mix first list of ingredients together, except the potatoes.


(potatoes can be thawed or frozen, no matter. Easier to mix in if thawed somewhat.)  When creamy goodness is mixed well, stir in potatoes.
Now adding potatoes:
Spread in greased or "Pam" sprayed 13 x 9" pan:

Corn flakes crushed and buttered, oh yum!!!

Pile the corn flakes onto the casserole, bake at 375 degrees until golden and bubbly, usually 35-40 minutes.

AMAZING. FAMILY WILL LOVE YOU, THEY WILL SING YOUR PRAISES, THEY WILL REMEMBER YOU IN THEIR WILLS!!!!  SO WORTH THE POTENTIAL HEART DISEASE!!!!

  1. I think my sister makes this! It's soooo delicious. And once, I made the mistake of asking what was in it. I have made SURE not t have this recipe available. How can you be so skinny and eat like this?? If I had this more than once a year I'd be 3X my normal size. *grumble grumble*

    1. Hahahahahah! You are cute and kind..... We don't make it often, just for that reason, but it's like one of those special foods you just love to eat when you have it!!!! I skipped the Philly Cheese steak sandwiches for Dave's birthday party and just ate potato bake... and Lindi Peterson's Mac and cheese recipe she did on Yankee Belle. And carrot cake.

      And then I've eaten broccoli slaw THE REST OF THE STINKIN' WEEK, LOL! But it was worth it to celebrate in carb-style, Virginia! And you know what?

      If we have leftovers (and we did, but my after school tweens and teens found it and WOLFED IT DOWN.....) we make potato patties with it, dip in egg and crumbs of your choice, and deep fry. Now you've got Southern Heart Attack potential!!!

My family has a similar recipe that we call Hashbrown Casserole -- frozen hashbrowns, cream of mushroom soup, sour cream, a bit of onion and grated cheese -- but have never tried it with a topping. We were obviously missing a major part of the recipe! It's a favourite with everyone, but I'm going to try your version next time. I think the topping will guarantee yours will be the recipe of choice from here on. :)

    1. Carol, this one has similar roots. I substitute the French Onion dip for the sour cream and onion because: EASY!!!!! :) And the crunchy, buttery, corn-rich, carb-laced topping???? SO STINKIN' GOOD!!!! We can't let Natasha see this recipe, she's health conscious and this does not exactly ring of HEALTHY FOOD!!!!

    1. Susanna, isn't that pic a hoot? My grandson got a "make a picture" sticker book with basic faces and sticker expressions, so he made a baseball guy for Grandpa because Dave (big Dave) loves baseball. Love it!!!

  4. So glad Carol mentioned that she used mushroom soup in her recipe because I can substitute that for the chicken soup in yours. Sounds like a great one for a potluck too.

    And love the snapshots into your life...and super love the grin on the hatless dress up girl. She knows how to work the camera. I still haven't seen Frozen yet but all the kids tell me it's a must see.
