A Fungus Among Us

What at lovely day it is. The birds are singing, the trees are budding, flowers are blooming...and you're here at the cafe. :) So good to see you again.

One of my favorite foods is mushrooms. I love them on pizza, in my salad and I especially love them sauteed. Best of all, it quick and super easy.

All you need are some mushrooms, whatever kind you like (I used just plain old button mushrooms this time), some minced garlic and some olive oil.

You can slice your mushrooms or leave them whole. You can remove the stems or cook those too.
Whatever you like. This is very flexible.

Now heat your olive oil over medium to medium-high heat. You don't want it to smoke, though.

Now add your garlic and let it cook just long enough to infuse the oil with that wonderful garlic flavor (1-2 minutes).

Add your mushies and toss to coat with the oil.

Remember that mushrooms are one of those veggies with a high water content. That means they cook down a lot, so take that into consideration if you're making these for several people.
Now I'll sprinkle them with just a little bit of salt (and pepper, if you like) and give them one more toss.

Ah...perfection.

I love to put these on steak or just eat them by themselves. Which is what I did this time. 
The best thing is that there's no guilt. Whoo-hoo!

Speaking of guilt...

I knew those 4 pounds last week were too good to be true. I actually gained .2 pounds this week, despite making what I thought were wise choices in my eating. 

But as I've said before, it's a sawtooth pattern. Some days up, some days down. 
And I will not give up. 
I just need to dig my heels in and hang on for what's sure to be a long, bumpy ride. :-)

  1. Yum, Mindy! I would just add a bit of butter and maybe some red wine as well. I make those sometimes to go with steak. LOVE cooked mushrooms!!

    2. I'm not sure, Mindy. I've just always thrown stuff in the pan that I thought might taste something like what I've had at steak houses. :)

    3. you should sue Ree for stealing your recipe LOL! whenever I've had this at a steak house I'm weird- I slide them off and eat them and the steak separately...can't go wrong with butter..sigh..not sure about the wine - hven't cooked with wine

  2. I love the 'shrooms, too! But I sautee them in butter. Thanks for the reminder! I'll have to put mushrooms on my grocery list.

    And the the two pounds? Phhfffttt! You have a net loss of two. Next week you'll subtract another one or two!

    Me? Don't ask. I've been traveling the last six days. I've tried to eat as well as I can, but I think I'll avoid the scale for a few days after we get home :)

    1. Jan, let's not make it worse than it is. It's only POINT two. :) And, as of this morning, it's already gone.

      I used to use butter for mushies, but it find the olive oil has a better flavor. I have combined the two on occasion, but then I tend to go back to the olive oil. It's the garlic that really makes this dish.

  3. I like the baby bellas - got attached to them and my closest grocery store hasn't had them in forever it seems. I would cook them in olive oil and add to eggs along with bell pepper and onion...

  4. Baby bella. What a nice name. Must look for them. Omelet. Mushrooms, fake eggs in carton and low cal Swiss cheese. YUMMM!!

  5. Love the catchy title, Mindy. :-) I was afraid to scroll down. I love mushrooms too, but I'm like Jan, I sautee them in butter along with onions and peppers. Now I'm craving an omelette with a side of sauteed mushrooms.

  6. Kav, I think we're all craving mushrooms now. And omelets.

    I do like the mushies with onions, but not as fond of the peppers. Depends on what I plan to eat them with.
