Almond Butter Chocolate Chip Cookies For Valentine's Day!!!

Jamie must have known last October that I was going to stumble onto a jar of Almond Butter in November and developed this recipe just for me!!!!

Jamie's Almond Butter Cookies (My Baking Addiction) 10/21/13

1 cup butter, softened (Jamie called for unsalted, I used regular butter)
1 cup sugar
1 cup lightly packed brown sugar
1 1/2 cups Almond Butter (Jamie called for Jif but my organic blend was great)
2 large eggs
2 teaspoons vanilla extract
1 3/4 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 1/2 cups quick cooking oatmeal
2 cups chocolate chips    (I used 2 cups regular semi-sweet and about 1 1/2 cup darker 60% because I'm close personal friends with the ENTIRE GHIRARDELLI family!!!!)

Mix butter, sugars, almond butter, eggs, vanilla until well blended.



It is IMPERATIVE to remove egg from shell first. Darn toddlers!!!!!!  How cute is she??????




Blend in flour, baking soda, salt. Beat about two minutes. Then add dry oatmeal and the chocolate chips.


That's if you can RESCUE THE CHOCOLATE CHIPS FROM TODDLER-MONSTER-BABY!!!!



Drop dough by rounded spoonfuls onto parchment paper lined cookie sheet. (I tested this to see if it made a difference, and it did! The cookie was more tender on the parchment paper. Go figure!!!)



Bake at 350 degrees for about 10 minutes.




This whole thing started because Mandy and Beth and I went to the Christkindl Festival in Canandaigua in November. This is a GREAT FESTIVAL.

Big, heated tents, gorgeous vendors, great stuff, good food, nice folks. I mean it's a wonderful festival and it's in November.

Up here in the cold north, festivals wind down in October and half of those get rained out.  :(  So sad!!!! The mud was so deep in the Apple Fest last year that folks had to wear farm boots. Anyway, I bought a jar of almond butter.... Now I had NO IDEA what to do with almond butter, but I've been like overdosing on almonds since going low-carb and it was $7 so I bought it.

And there we were, two months/three months later, saying, "What can we do with this stuff???"

Mandy hopped onto the ever-present laptop and found this recipe.

THESE COOKIES ARE MARVELOUS, WONDERFUL, DELICIOUS AND GREAT TEXTURE!!!!

In all seriousness, these are one of the best chocolate chip cookies I've ever had. The combo of oatmeal and almond butter MAKES THEM AMAZING.



Give them a try. And then let me know what you think. Easy recipe, and the only thing I did different was the refrigeration thing. I did not refrigerate the dough, the kids would MUTINY if I stuck dough away for three hours...

Shoot, we were eating it raw, and we loved, loved, loved it!

    1. Okay, as an experiment I went to Internet Explorer. You are right. Those options are there in IE but they are not in Mozilla. Strange. Will remember to visit you in IE.

    2. I've never made a better cookie. The crushed walnut raspberry thumbprints at Christmas rank right up there, but gosh, these are amazing. And Tina, I'm always in Chrome, but it's so weird that these boys can't get together so everything is universally GREAT in all search engines. Mine just shows the "Pin It" choice today, but I've seen the Crosspost icon too.

    3. It's always my fault! LOL But for Crosspost, I have no idea how that go there. I only added the Pinterest hover button as well as the buttons at the bottom. Strange that some don't show up in certain browsers. All show up in Safari.

    5. Missy, that's got to be it. I post from Google so Crosspost doesn't show for mine. But Mr. Google keeps rejecting my payments for stuff, saying I didn't update my card, so I'm MAD AT GOOGLE right now. He's a brat.

  2. Oooh - I'm heading to the grocery store on the way home from work this afternoon. Must add almond butter to the list. So I had read somewhere that if you are baking a cookie recipe with butter you should refridgerate for a few hours so the cookies don't spread too much so that's what I've been doing and it does seem to work. Cookies hold their shape when baked -- even the one choco chip recipe I'd always had trouble with. So, curious to know if you found that these cookies spread at all? It doesn't look like if from the pictures.

    1. Kavalicious, I was supposed to chill the dough. I didn't. And they came out fine. But they were more tender with the parchment paper than without, so that was a good test! I don't refrigerate sugar cookie dough, either. I'M SUCH A RADICAL!!!!

  3. I've never had almond butter- nutella either- I'm afraid to try them! peanut butter is hard enough to leave alone though luckily I only go through phases with pb but when I'm in my phase I'm in it til I get pimples again LOL!
    these look good but waayy too much work esp if I have to find room in the fridge to refrigerate the stuff then have to keep from eating them all in one sitting. life is hard.

    1. Ah, Susanna, my young grasshopper, I need to open a cookie and cupcake shop near you and then you can come and VISIT US and eat cookies and cupcakes when you want and not have them tempting you from the countertop!!!

    2. yep. I'm coming to stay with you next winter - I want some deep snow and food - where I don't have to drive to wrok or deal with aything. a vacation with deep snow! dunno about all those kids though - they keep playing on my nap couch LOL! might be some arguing over that couch...

  4. YUM!! Ruthy, did you actually use almost double the chocolate chips her recipe called for? Or did you just double the whole recipe?

    1. Doubled the chocolate. I used the two different kinds of Ghirardelli, and that alone makes these cookies worth every calorie and carb!!!! I love chocolate studded cookies, and ratio is all about MORE CHOCOLATE. :) That might be part of why they are soooooo good!!!!

  5. Ooo...these sound yummy. And you're right, Ruthy, they sound very similar to the Peanut Butter Oatmeal Cookies I shared a couple of weeks ago. Will be looking for almond butter now.

    1. Mindy, isn't that funny? So I bet you could use any "butter" in the place, including NUTELLA (light bulb moment!!!!) and have fun with it! Nutella with chocolate chips/oatmeal/macadamia nuts. Doesn't that sound like a match made in heaven?????

    3. Although macadamia nuts are crazy expensive.... what would work to give you that same "bite" but not be as pricey? I want folks to be able to make things without needing a second mortgage, you know??? Anybody got suggestions?

  6. I'm adding almond butter to my grocery list, too! These look fantastic.

    Especially with the extra chocolate. And of course you have to use Ghiradelli!

    Good tip from Kav about refrigerating dough with butter - I'll have to try it with a recipe I'm having trouble with. We love the flavor, but the cookies spread so much.

    And I always use parchment paper with cookies - but only because I like the way they slide right off the pan. I hadn't even thought about how they might affect the baking.

    By the way, I love your helpers, Ruthy! There's nothing like a batch of cookies to keep the munchkins busy, is there?

    1. Oh my stars, Jan, aren't they the cutest things? They are right now making SECRET VALENTINE HEART COOKIES for Moms and Dads... now of course, not a one of them can keep a secret, which only makes the whole thing cuter!!! Beth and Jon are frosting cookies with them and there are sprinkles E-V-E-R-Y-W-H-E-R-E.

      You can never have too many sprinkles or too much glitter!!!

  7. Oh, I am so going to try these. I am doing a plain gluten free oatmeal cookie recipe on the blog this weekend. These are stellar. More protein, more chocolate. YUM.

  8. We made heart-shaped sugar cookies today with homemade buttercream frosting for our little parents for Valentine's Day. And cute paper valentines.
