Sweet Potato and Apple Bake, Fall Continues!

You don't need a recipe for this one, it was pure common sense, the sight of sweet potatoes and fresh Zestar apples calling to one another across the kitchen, very "Cathy and Heathcliff"!!!

"Zesty!!!!"

"Sweet Potato!!!!!"

It was music, I tell you, pure chemistry-riddled music! So I simmered those sweet potatoes in a nice kettle of water.... Just until they were fork soft, I did not burn them or mush them. This time.



And then I peeled those big, bad boys and when I burned my hands I got a clue and WAITED until they cooled down a bit.

(No one ever accused me of being smart... I'm just sayin'!!!!)

So I took out my 7" x 11" pan and gave it a little spray of Pam. Well, it wasn't really Pam, it was Sam's version, but I don't remember the name of it, Generic Baking Spray most likely....



And I chunked up sweet potato, then sprinkled it with brown sugar (you had me at hello!!!!) and some cinnamon and nutmeg and dotted with about two tablespoons of butter.

And then I layered peeled and pitted apple slices over it, I ate a few, they were very good!



Then more sweet potatoes, brown sugar, spices and butter.

Then topped with more apples.



Baked at 350 degrees with aluminum foil covering the top.

Oh, the smell.

Oh, the taste.

Oh, divine, I'm not kidding! Simple fall blend of flavors, just enough sugar and spice, it was like a feast for the senses.

I ate more than my fair share.

And that made me very, very happy.

  1. This is brilliant! I would never have paired the two together but why not????? Big question though -- what's a Zestar apple? Never heard of them. Would a Mac work? Or Empire? And what a great way to get veggies into fussy kids.

  2. Any apple would work, Kav... I'm just excited about Zestar becaue they're like honeycrisps, only earlier and with a sweet tang and crunch that makes you love them! But any apple will work. What amazed me was how the apple juice cooked right into the sweet potatoes. Wonderful! And how the blend was perfect. We thought of a streusel topping, but why add unnecessary calories and carbs to something wonderful? That would make it more dessert-like, but I'll tell you, this was just amazingly good. And the kitchen smelled heavenly for the 1/2 hour or 40 minutes it took. Just wonderful!!! #totalfallexperience

    1. Crisp, Sweet/tart, great flavor and juice, like the perfect apple. I think we all have apple faves, though, so maybe my perfect apple isn't perfect for everyone!

  4. I love fall recipes and apples right out of the orchard. YUM.

    I grew up near a Stayman-Winesap orchard. Now that was a combo. I can only find one or the other now. Makes me sad.

    1. We used to have that combo here. Very popular but that was (sigh....) a long time ago!!! :) Oy, I'd forgotten, Julie! Nice combo, for sure. I still love cooking with Cortlands or Crispins (Mutsus) for the majority of things because they have such a dependable taste no matter how ripe they are. And that's big in baking.

    I'm also thinking this would make a great breakfast, don't you?

    I have the apples (still working on that applesauce - 28 quarts down, 42 more to go), but I'm out of sweet potatoes :( I'll have to stick them at the top of my grocery list!

      Okay, kidding, we New Yorkers are an odd lot. Anyway, Jon's from New Ulm originally and now his family is up in St. Cloud. And they're coming to visit our new combined grandson on Saturday so they'll get to meet Finn!!!! He's adorable. And a little smelly. I love having Northern apples, don't you? It makes the snow a ho-hum, whatever thing to have apples!

    1. Susanna, LOL, no you can't! And it was just enough to make it delicious without piling on a ton of extra useless calories. I can justify the squash carbs and the apple..... but this was a lovely balance! I bet you'd love it, and I was soooo tempted to throw walnuts or pecans on it, but then the family would huff and puff and blow my house down... so I desisted. But they'd be excellent mixed in with this!

Hmmm, apples, sweet potatoes, butter, sugar...maybe I'll toss in a handful of pecans, just because I can, LOL! My mouth is watering already : )
