This and That

Missy, here. I have to admit, I didn't get a single thing cooked this week. Nothing to share. I got back from conference Monday evening. Was sick and went to the doctor on Tuesday. Had supper at church on Wednesday. And went out with my daughter Thursday after shopping for a homecoming dress!

So I'm going to share bits of this and that.

First, for pure entertainment...

Another of my epic fails. My son went to buy this sausage that he said was amazing. Conecuh Sausage. I left it alone for a bit and, unused to the amount of fat (I usually do turkey sausage), it got just a BIT overdone. I mean, there's nothing quite as shocking as walking outside to check the grill and find flames shooting out!

If you try this wonderful sausage, don't leave it unattended! And don't cook longer than the time recommended. I don't think it's supposed to turn into ASHES.

OOPS.

Another of my odds and ends I thought I'd share is a trick for quick chicken and dumplings.


These frozen dumplings are so tasty. And simple to make. But they do take some time, so plan for about 45 minutes of cook time. I made them in chicken broth and tossed in the leftovers from a rotisserie chicken.

And here's the salad from the ACFW conference, the shot Mindy didn't get. I loved it! Oh, and just ignore the fact I had already started eating when I thought to take the photo. :)


So, I didn't have anything much to share today. I apologize. But at least we did have success with the homecoming dress!

  1. salad looks good! (kinda smallish but guess that's fancy eating huh?!) my aunt got frozen dumplings and my mom started using them - I recently decided to try frozen biscuits- and they're good! may eventually try from scratch again but these are so easy - put in toaster oven and cook. no mess.
    I'm afraid to cook fatty foods- I'm one who has to do bacon in the microwave because popping grease scares me!

    1. Susanna, I love frozen biscuits! I do bacon in the microwave, too. Mainly because I buy the pre-cooked kind. :) You just microwave for 5 seconds per slice. No grease, no mess. I love it!

    1. LOL, Virginia! I know. After the initial irritation (I was aggravated because I was cooking inside as well as grilling--getting no help from anyone in the house), we ended up laughing hysterically at the end product.

      Although my son wasn't so happy since he'd made a trip to the store just to buy it! He said it's really good sausage, so we'll try it again sometime. And I'll put someone else on grill duty if I'm inside cooking!

  3. I love frozen biscuits. The Pillsbury Grands frozen are almost as good as homemade for biscuits and gravy. For sausage, egg, and cheese biscuits, we still like the canned ones best. Is this weird?

    I've probably made biscuits from scratch once. They were decent, but not like my m-i-l's (thus rather unappreciated), so I've never made them again. (In his defense, his mother makes amazing biscuits!)

    Similar thing with dumplings except DH just doesn't eat them at all...so no need to hone the craft (except that my m-i-l will probably not live forever, and then what will I do for my dumpling fix?)

    1. Andrea, I didn't even know Grands came frozen now! I bet they are good.

      My favorite biscuits are Mary B's Tea Biscuits. www.homadefoods.com They're amazing. The kids tend to eat 6 or more at a time! (they're small) :)

      I haven't tried to make homemade biscuits for years. Mine always ended up like hockey pucks. I truly fear biscuit making is going to be a lost art. At least in my family.

    2. (Ruthy walks away, chin down, believing nothing is sacred any more when folks are moving away from Bisquick (I love using Bisquick for pancakes and biscuits, and I'm still playing with my own version of Loveless Cafe biscuits... So good! The secret is in the yeast. )

      But I do find that with my life crazy busy between jobs and family, I'm bending my standards left and right! Hamburger Helper last night, with the leftover burger and mushrooms I had the night before because I was starving... Fifteen minute suppers are the norm. Tuna sandwiches tonight!!! :) and I'm okay with that because I've got writing time!!!!

    3. just noticed my frozen biscuits are this same brand! :-) got the thin ones to save a few calories(though I sprinkle shredded cheddar on top when they're done and let it melt so guess I sorta cancel out the savings...)

      I didn't know Grands were frozen now either! if their crescent rolls are frozen I'm in deep poopy I think!

    1. Thanks, Kav! I do feel better. Am just dealing with the stomach pain and upset from a strong antibiotic. I just have to keep food in my stomach. :)

  5. So sorry you were feeling ill! Glad you're better, now.

    And the sausage...those must have been some awesome pyrotechnics :)

    The salad looks scrumptious. I miss good greens here - we rarely find good quality in the store, even though restaurants seem to get tasty stuff.

    Now for the biscuits - I must do a post on homemade biscuits! I had no idea so many of us were deprived of these tasty things! I rarely buy canned biscuits, and never frozen. You guys are in for a treat :)

  6. You got sick, Missy? Allergies? Or did you pick up something at conference?

    We buy a sausage that looks similar to what you had there, sans the charring:) It's a German sausage we pick up at a little meat market near the "farm." So good. I used to grill it, but have taken to boiling/steaming it. Much of the fat cooks out, but the meat is still nice and moist. Throw in a can of Bavarian style sauerkraut, maybe some beans and you're good to go. Hmm, that might be a post soon.
