Mother's Day Leftovers

Missy, here. We have a running joke in our house about Mom always wanting to eat at "Shaaane's" (said with a very whiny voice). This teasing is due to a past experience where I may or may not have whined about wanting to go eat at Shane's Rib Shack. And where I may or may not have driven straight to Shane's even though the rest of the family chose another restaurant.

Heehee. Don't you love being the driver in control?? It's so easy to hijack the family!

ANYWAY...

On Sunday, Mother's Day, I had the honor of once again being in charge. Gotta love those twice a year occasions (including the birthday) where a poor mother gets her way. So this past Sunday, I got to choose where the family would take me for lunch after church. And guess where I chose...

SHAAAANE'S

No one was surprised. And I had a wonderful lunch of barbecue, mac & cheese and fried okra. We bought the family pack, which gave us a whole pound of pork barbecue. And believe it or not, that meant some leftovers.

So what do you do with leftover barbecue?

I made a salad on Monday!


 Take your favorite lettuces (mine is romaine). Add whatever veggies you want. I only had carrots at the moment. Cucumbers and tomatoes are good. And actually chopped, raw sweet onions are good on this salad. Also, grated cheddar cheese--which I totally forgot about.

Add your leftover barbecue pork or beef or chicken. Top with ranch dressing and drizzle with barbecue sauce. YUM!

A nice reminder of my day at Shane's. :)

  1. I love a good barbecue restaurant! But I never in my life thought about barbecue salad.

    You are a genius, even if it is GA style and not NC style!

    1. Save some leftovers next time you get barbecue and give it a try! Or you may find a restaurant that has the salad on a menu. That's where I first saw it.

  3. Alas the whole BBQ thing is lost on me...unless we're talking veggies! But I love that you got to eat out for Mother's Day. And turning your leftovers into a salad was very creative. I wouldn't have thought of that. And speaking of salads, I'm going to plant some salad ingredients this weekend (it's a long weekend in Canada) and I can't wait to stroll into my backyard and collect my ingredients for a healthy lunch! Providing the bunnies and squirrels don't beat me to it!

    1. A backyard salad! What fun!

      I've been successful at keeping the bunnies and squirrels away by making cages for my garden out of chicken wire - kind of like an upside down basket. Air and water can get in, but not critters.

    2. Kav, I envy you! I would love to be able to walk out and pick fresh veggies. The only thing we've planted in recent years is tomatoes.

    3. Oh -- thanks for that tip, Jan. I'll have to try it for my zucchinis and cucumbers. For some reason the squirrels LOVE to hollow those out and poor unsuspecting me goes to big what I think is a nice plump veggie only to find that it is as light as feather due to the fact that it has been gutted. Bah!

  4. The salad looks yummy, Missy! I love a bit of protein in my salads, but never thought of leftover BBQ.

    Not that we ever have leftovers.

    And the restaurant sounds wonderful - except one thing. Did you REALLY order okra? You ordered it ON PURPOSE?

    If we ever go to a BBQ place together, I'll let you eat ALL the okra. Just don't show it to me :)

    1. OMGosh, Jan!! You don't like fried okra??!! I LOVE it!! That's something I need to make here on the blog this summer. You can just close your eyes and hold your nose. ;)

    2. Okra is the one vegetable I can't understand. I don't eat lima beans, but I can understand that some people might like them.

      But okra is...well...I'll just avert my eyes that day!

    3. LOL! I love it fried and I love it stewed in tomatoes (with sugar, of course). So I guess you can eat just about anything if you fry it or add sugar. hahaha

I've been thinking 'bout bbq lately..just had it last Saturday but still..can't believe you have to force your family to eat bbq! my mom's restaurant of choice was always Wyatt's cafeteria when they were open(then it switched to Pasado's mexican food!) she liked that they had 'something over rice' since she was the only rice and veggie eater in the family at the time. we liked the strawberry shortcake and the fried chicken and other 'edible' stuff you could get.

    1. Susanna, we all had barbecue sandwiches for lunch and could only fit so much meat on the buns. And I think they gave us way more than a pound. So we had plenty!! Lots leftover.

    2. I was just wondering why you'd have to whine and override other votes for bbq - we were usually all gung-ho for bbq!
      I ended up loading up my dog and heading to my friend's to visit for the weekend. felt weird traveling with one dog - heck the whole house feels empty without my kayla but oh well.
      I miss Wyatt's - Luby's just isn't the same. even when they opened a 2nd store where I lived it wasn't the same.
