Pepper Basham's Quick Chicken and Dumplings from Grandma!


Chicken & Dumplings (fast-style)

(Makes a BIG pot - so half the recipe for smaller families. We have a family of 7 and usually have leftovers)

It's a great low-cost dish for the amount you get.
1. 5-6 boneless/skinless chicken breasts - cover with water and boil until done
2. Take out chicken and quarter.
3. Return quartered pieces to water (pour out excess water until the water is about an inch above quartered chicken pieces)
4. Add 1 stick of butter
5. Add 1/2 cup milk
6. salt & pepper to taste
7. Use Bisquick recipe for dumplings (usually 2-2 1/2 cup of mix and 3/4-1 c milk)
8. Drop mixture by the spoonful into boiling chicken mixture. reduce to low or low-medium
9. Cool uncovered for 10 minutes
10. Cover and cook for 10 more minutes until dumplings are fluffy
12. Serve and enjoy


Note from Pepper:

My Granny taught me this recipe when I was seventeen years old, but she made me learn the old-fashioned way before she taught me the 'quick' way. (Old-fashioned without having to kill and pluck the chicken :-) This is the easy, lower cost, faster-life recipe. If you use the 'boned' chicken, the recipe has a whole lot more flavor - and of course, if you make homemade dumplings, you can modify the dumplings to be the type you like.
Chicken and Dumplings are fairly easy to add vegetables as well. Some people add peas into the chicken mixture, just before adding the dumpling mixture.

    I plan to make this recipe tonight so I might try for a 'real' picture to post :-) It's not as pretty as the one Ruthy put on display.
    Also, there is a FABULOUS crockpot Chicken-n-dumplings recipe for those of you (like me) who come into the house with 15 minutes until supper needs to be on the table :-)

  3. This looks great, Pepper, and so quick!

    You're right - the whole chicken boned would add more flavor, but with butter in there, I think it can stumble along with only the white meat :)

    Your comment about adding peas makes me think you could add other veggies, too, and it would turn out to be almost a pot pie, wouldn't it? Maybe some potatoes, carrots, onions....

    1. Jan, I haven't tried the veggies because my kids like it plain (like most things...eyeroll), but I'm a fan of chicen pot pie too...so yum

  4. Jan, I agree... can't you see peas and carrots floatin' in this thing? And on facebook, one of the gals suggested tossing in a can of cream of chicken soup.... Never a bad thing, right????

  9. Pepper, thank you! I've always had problems with my drop Bisquick dumplings falling apart. I think maybe it's because I don't remove the extra water! What a brilliant idea to keep them from moving around so much that they disintegrate. :)

      It's fabulous with creamy mashed pototoes (I add cream cheese, milk, and butter). Just don't listen for the clogging of your arteries as you eat and you'll be fine :-)

    Do you know if you can freeze it? There's just me and well, even after cutting it in half I still have probably 4 servings left. I love chicken and dumplings, but not that many nights in a row.

      Hmm, I've never had it stay in my fridge long enough to freeze, so I'm not sure. There shouldn't be any reason why it couldn't be frozen.
