Breakfast for Dinner (again)!

Missy, here. Once again, I decided to do breakfast for dinner this week. Actually, it was for Shrove Tuesday! But I wanted to make waffles instead of pancakes. :)

Months ago, I shared a waffle recipe. But since then, I've discovered an amazing one on allrecipes.com. Click here for the original (Waffles 1).



Here's the way I made them...


         2 eggs (I used All Whites liquid egg whites, whipped until frothy)
         
2 cups all-purpose flour
         
1 3/4 cups milk (I used buttermilk)
         
1/2 cup vegetable oil
         
1 tablespoon white sugar
         
4 teaspoons baking powder
         
1/4 teaspoon salt
         
1/2 teaspoon vanilla extract


Preheat waffle iron. I use a small Belgian waffle maker that only makes one at a time. But they're nice and thick.

Beat eggs (or in my case, egg whites) in large bowl with hand beater until fluffy. (I used my stand mixer with the whisk.)



In a separate bowl, mix together flour, buttermilk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth. Then either add to the egg whites and whip in the stand mixer or fold the egg whites into the other ingredients. I've done it both ways, and both work fine.

Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.


They're almost never perfect. But always taste good no matter what shape!

Now, here's the fun part. :) My daughter has been craving bacon waffles, which she dreamed up. So, figuring that's a stroke of genius (I mean, isn't EVERYTHING better with bacon??), I grabbed some of the bacon I'd cooked and crumbled it (well, it wasn't crispy, so I actually tore it).

Then I pushed the bits into the batter before I closed the waffle iron.



And voila! Bacon waffles!


Or you can just enjoy your bacon (soy bacon for our vegetarians) on the side like I did. :)

Enjoy with melting butter and syrup. I use sugar-free syrup, and it's just as good. Well almost...

  1. I will try this recipe instantly! My waffle recipe for my Belgian waffle maker is maybe this one, maybe another from Allrecipes, and it was so much better than the original one I found that just took too long....

    I will keep my bacon AWAY from my waffle. Far away, like on a separate plate/planet distance.

    But I love that your kid is an adventurer and likes to mix things up. That rocks!

    1. LOL, Ruthy. Ah, come on. Where's YOUR sense of adventure?? Don't you love you bacon when it gets all coated with the syrup? Well, this is just a variety of sweet bacon. :)

  2. Bacon waffles? Pfffft!!!! I have been heavily traumatized by waffle irons in my past so haven't tried to make any in ages. You almost tempt me. And I adore mine with heated homemade fruit sauce like strawberries or blueberries. Yum! It's been ages since I've had a waffle. I keep telling myself that pancakes taste the same but they don't.

    1. Kav, I've actually been more of a pancake fan. When I was growing up and given a choice, I'd always choose pancakes. But since I bought this waffle iron, I've come around to loving them better. So go for it!!

      This waffle iron is non-stick, to I haven't had any of the traumatizing sticking like I had on my old one. :)

  3. Bacon in waffles? Of course! I mean, think of the Bacon, Egg and Cheese McGriddle at McDonalds. Okay, they put maple flavored chips in the pancake bun and bacon on the sandwich, but it's the same idea, right?

    No waffle iron at our house, but I'd try the same recipe with pancakes. Sounds delicious!
