Pizza without the crust


Hello, everybody! The Fresh Pioneer is back and we're having pizza today.
 
 
Ok, I lie. Doesn't that look A-MA-ZING???? Oh my gosh, I need some RIGHT NOW

*deep breath*

Since we can't eat like that without giving ourselves a heart attack, let's see what's in the cupboard. I mean fridge...





I know some of you hate mushrooms, but I swear you should try these. I sauteed them with lime, garlic, thyme and oregeno. It smelled like pizza!
Mmmmm.... Steaming. My kids wanted to eat them all straight but that would be no fun. Plus, it would take a lot of mushrooms to make everyone happy, and that would get spendy.

Edna was chatting with the vintage pie plate. They had quite a discussion over post wartime rationing. They both LOVED 'The New Guernsey Literary and Potato Peel Pie Society'.


We all agreed we're forever in love with Dawsey. Wounded hero, protector, deep thinker, single dad to the orphan girl and a lover of books. *sigh*

(APPARENTLY, Kenneth Branagh is directing the movie version. Hm. I'm scared of movies of my favorite books. That hardly ever works out. )

Anyway, back to our little project.

Mix
1/4 tsp salt
1/8 pepper
1 cup NO FAT milk
1 cup shredded LOW FAT mozzarella cheese
And 3 eggs whites and one egg yolk.

(Yes, I know they come with one yolk and one white per shell. But in the interest of lowering the fat, take the other two and... feed them to the cat, I suppose.)

 
(Yes, Missy, it's basically a fancy omelette!! ) Into the oven at 350F for 20 minutes.

 I sprinkled more mozzarella on the top and gave it another ten after it started puffing up. It could have been more like pizza with some tomatoes, I suppose.
YUM. Let it sit for about ten minutes so it won't fall apart when you cut a piece. Unless you're eating it straight from the pie pan. Which is an option, believe me.
This was my hubby's plate. (He didn't eat it sideways. Wazzup with the pics??)

He just didn't think it was right not to have some toasted bread with it. I should be glad he didn't wrap it in a tortilla. Which makes me think of tacos, which makes me think of taco pizza. I still want pizza. But I'll settle for knowing this won't clog my arteries quite so much with my super low fat cheese and no fat milk. It's not raw food, but it's getting closer to healthy.

 


 Yay, us! So,  stay healthy and eat right because next time we're going to have something sweet and lovely. Party food alert! MMMMM!

  1. Yes,talk about lovely AND gluten-free! I would not have thought of the lime.

    All I need is the mushrooms. Must go to the store today!

  2. really, if you'd told me the ingred list, I would have shrugged. It sounds so ordinary. But I found it on a vegetarian food site (the original had fire roasted tomatoes) and I think the lime/garlic/oregeno makes it taste so good. It was delish!

    1. It was! I've made it twice now, tweaking the herbs and adding a homemade tomato-basil sauce. Mmmmm.

  4. Glorified omelet? Frittata (sp) with kick? Healthy pizza?

    I don't care what you call it, it looks delicious and easy. Just the thing for me the next time I make regular pizza for the rest of the gang.

    I get those yummy mushrooms all to myself in this house!

    1. I actually don't like omelets, they're so.... eggy.

      But somehow the amount of mushrooms, cheese and spices make this bearable. And yummy!!

  5. First things first?

    The New Guernsey Literary and Potato Peel Pie Society' is being made into a movie???????????????????????????????????????????? Be still my wildly beating heart! I LOVED that book!!!! I loved it so much that I bought two copies so I could keep one in pristine condition on my bookshelf and loan out one copy to everyone and their dog who would take it! Some did so reluctantly but everyone loved it once they'd read it.

    Now -- on to baked omelette that's pretending to be a pizza. Yumm. I never thought about baking an omelette! I might just go home and try this tonight. Thanks for the suggestion.

    1. Oh, Kav, I knew I loved you. I ALSO have a hardback (don't bend the jacket!) and several paperback copies to loan out. I gave some as Christmas presents that year.
      I know some people objected to certain characters, but the fact the book is centered around something I was not AWARE even happened (the German occupation of the Guernsey Islands for FIVE YEARS)... that makes it a winner.
      Plus, we've always been big fans of the Ivy and Bean books, so it was a charming idea that her aunt was also a writer. Her writing is amazing.

      And for a love story to wrapped around books, Charles Lamb, and trying to find a good read when you can't just order everything online? Magic.

      Dawsey is perfect and everyway (because he's not, naturally) but she's got to be one of my favorite heroines of ALL TIME. When she runs TO the burning library (described in one of her reccommendation letters) I laughed so hard!!

      Ok now I've taken up all the space writing about BOOKS. :D

    3. Oh, Jan, bump it to the top. Just amazing. Gorgeous. And a good writer's study guide because she tells an amazing story through letters. Unbelievable craft. It looks easy... until you try it. All our usual tricks are off limits in that form.
