Holiday Side Dishes

There are so many of them, aren't there? And we all have our faves.

Last week was a baking (not to mention eating) frenzy around the Obenhaus' abode. I did my best to rustle up everyone's favorites dishes.

This one is my husband's and it's easy peasy. His family calls it corn pudding. I don't find it very pudding-like, more like kinda cakey, but it is all kinds of yummy.

Here's what you'll need:
  • 1 - 15.5 oz can cream style corn
  • 1 cup sharp cheddar cheese, grated
  • 1 - 4 oz. can diced green chilies
  • 1/2 cup corn meal
  • 1/3 cup vegetable oil
  • 1/4 cup chopped onion
  • 2 eggs, well beaten
  • 1 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/8 tsp. cayenne pepper




Dump everything into a bowl and mix 'er up.

Now I know what some of you lilly-livered folks north of Oklahoma are thinkin'. Eww, chilies. Eww, cayenne.

Well, you can skip the cayenne, IF YOU MUST (oh, go ahead, be brave and add just a dash). The green chilies really aren't hot though. Just flavorful. And we're all about flavor, right?



Now we'll just pour that mixture into a greased casserole, bake at 350 degrees for 40-45 minutes. It should be golden to slightly brown on the top and around the edges. I'd love to show you the finished product, I really would, but, well.... I forgot to take the pic. Everyone was chompin' at the bit to eat and I got so caught up in the frenzy I forgot.

I'm sorry. I won't do it again. 'Cept for that other recipe I'll share later where I forgot to capture the finished product.

Sigh.

So how was your turkey day? Are you still eating leftovers? I am. They're still yummy and I haven't sprouted feathers yet.

    No leftovers, but we're gearing up for a big bake sale on Tuesday. My chrch class is raising money for Hurricane Sandy survivors. So, now I've got piles and piles o' cookies...

  2. ok when you say 'cake-y' is that like cornbread cake-y or something different? I mean should I cook some beans to eat with it/over it or is it more like a 'souffle' type cake-y where it needs meat or something else...hmm it's in a casserole dish not a cornbread pan..

    I don't have leftovers - went to weight watchers for the first time in a month :-( was up a litte over 6 lbs and that ain't good. honestly it wasn't from one meal though it was from a lot of emotional eating from seeing family around halloween and the holidays in general missing my family along with quilt festival and quilting(which for some reason don't go hand in hand with exercise and eating right) and not having the energy/desire to plan ahead so I eat at home instead of grabbing drive thru and dine-in...this recipe doesn't look too high cal other than the vegetable oil...
    turkey day was good though- a friend decided to cook and invited me and another lady who became a widow this year along with her son/daughter and 2 students they know from a local university. lots of 'sentimental' family dishes there - honestly I've never cooked anything for a big dinner but I got thre a little early in time to see a lot of things made and I tell you I now know why they sell cool whip in those huge containers! if it was fruity or jello-y it got dumped in coolwhip - if it was a veggie and served cold it got dumped in sour cream or mayo or both - if it was hot it got dumped in cream of something soup. It was very nice though being with others.

    1. Ah yes, Susanna, Cool Whip, Cream of Whatever soup, and sour cream were all created for the holidays. I believe I used some of each :-)

      As for the corn pudding, definitely not dry cakey. Maybe that was the wrong word to use. Just not like Jello puddingy. Cause, of course, the cornmeal would just mess that all up.

      Wait a minute! I've got it. Pft. Where was my brain when I was posting this? (don't answer that) It is a pudding, but more like a bread pudding. And we all LOVE bread pudding.

  3. Bread pudding only with corn in it...sounds so wrong to this Irish/Canadian -- but I'm game to give it a try...without the cayenne though. Sorry. I wouldn't survive in Texas one day, I know!!!!!

    1. That's okay, Kav. There are weenies in Texas, too. According to some, I'm one of them since I don't like things super hot.

      And not bread pudding with corn in it, just that consistency after it's baked.

    2. you'd love it here Kav! well with some antacids maybe but ice cream helps cut the heat if that helps! I like spicy yet I turn down jalapenos on my nachos or pick them off- picking them off is my favorite since it leaves some of the flavor. and Rotel/green chilies/salsa goes in and on just about everything..

    1. You could use it in a meal like polenta. It has the same kind of corn goodness...

    3. LOL - ugh, have you ever tasted that stuff? It's disgusting!!!! And gives vegetarians a bad name in my humble opinion. Now tofu burgers are a whole other critter. Yum!

  5. I love corn puddin' (had to go very southern there). :) I've never had it spicy, though. Ours is usually on the sweet side.

    I'll have to try adding a little kick!

  6. I love this stuff. I love it sweet, like Missy mentioned (a result of my stints in Kentucky and Kansas, I'm sure) and I love it with that little kick the chilies and cayenne give it (a result of the Texas years...).

    Come to think of it, I don't make it often enough... I'll have to give your recipe a go, Mindy!
