Simply Saturday Easy Peasy Patriot Cake!

For the 4th of July I took the easy way out and did a simple version of the cake Missy showed us last week....

Take one angel food cake and slice it in half, crosswise. Put wider bottom on plate. Spread with thick whipped cream. Fill center hole with whipped cream.

Top this layer with whole blueberries and sliced fresh strawberries, creating a red/white/blue effect.

Add top layer.

Frost top of cake with more whipped cream. Spoon or pipe whipped cream around lower edge of cake. Arrange sliced berries around outer edge. Dot with blueberries in between. Put one perfectly gorgeous ginormous fresh red strawberry in the center hole. Refrigerate.

Easy peasy and takes about ten minutes, tops. And looks festive, summery, patriotic! Cool and creamy taste makes folks smile.

I love it when folks smile!

  1. I licked the screen!!! Oh, YUM. And it sort of looks like something kids would love to help make. f course, it wouldn't be pretty then, but at least they'd have fun. And it would still taste delicious!

    1. They help make everything around here... And it still came out pretty, right? We didn't pipe the whipped cream with a frosting bag, (because their piping needs a little work, LOL!) but it still looks good! Yes, children are great helpers on this project. They do lick their fingers every time they place a blueberry.... occupational hazard... but there were no runny noses and it was all family.

      That doesn't mean I TOLD THEM THAT. You get that, right???? ;)

  2. wow there IS some cake in the pile of whipped cream LOL! :-) now angel food is pretty lowfat and the fruit makes it even healthier! and I think whipped cream is in the dairy section -or close to it!

    hey finished your book last night! now I wanna learn irish dancing! enjoyed the story - this hero/heroine reminded me kinda of the ones I liked in Winter's End - with him thinking nice clothes and nails are too much -sheesh! and more fried pies!

  3. As I read your post I kept seeing "whipped cream" and more "whipped cream". I think the cake is just a vehicle for your whipped cream addiction and the fruit is there to make it seem healthy.

    But, OH MY, it looks SO GOOD.

    I really have to stop dropping by here before breakfast :)

    You all have a great weekend. I'm trying to squeeze writing time in around family wants - shopping with the daughter, cheering the oldest son on as he goes to a job interview (yes, on Saturday!), and enjoying cool, cool weather. 61 degrees here at 8:30 this morning. Is this heaven or what?

    1. Cool weather is heaven... And a job interview is also heaven these days! I try to remember to thank God for employment every day. I think we got a little spoiled there for a while, thinking jobs were "easy come"... We know better now. Dagnabbit. Praying for the unemployed and the under employed.

      Although I'm not so big on the "under-employed" mindset after doing hairnet and nametag jobs for years. As long as you do whatever you're doing to your very best ability, then even hairnet jobs rock. Jan, best of luck to him! And you!

    2. The interview went well - a part time position (between 35 and 40 hours most weeks), using skills he has. Actually, it's at a NICS counter at Cabela's - making sure the paperwork is filled out properly for gun sales. Yup. Right up his alley.

      (Too bad it wasn't NCIS. That's what I thought he said at first...)

      And Monday he has another interview. The County Treasurer hired someone else a week ago (he was choice #2 out of 180 applicants for the job), but they called yesterday and want him to come in to talk about a different position.

      When it rains, it pours, right?

      Oh, and shopping was successful. Newly employed ex-college girl has an adult job now and found some adult clothes to fit in.

      Our part in all this is providing a place for these unemployed adults to live while they get their feet under them - no easy task in this economy, but much easier with no dependents to provide for.

    3. Ya gotta do what you gotta do. We've had kids back in the house for a few months here and there. Family is family. And the West would have never been "won" if families didn't look out for one another. I'm stinkin' proud of you.

  4. It's amazing what you can do with an angel food cake, isn't it? This looks fast and yummy but with all that cream it better get eaten fast. Somehow I don't think that would be a problem!

    1. Hi, lovely lady! Hey, you can use any fruit... peaches, raspberries, blackberries, apples...although I'd cook those a smidge, soften 'em up. I love cake, fruit and whipped cream!
