Veggie Omelet with Missy

The Belle, here. I've mentioned before how much I love egg white veggie omelets. So I thought I'd share mine with you today.

Ingredients:
Egg whites (carton or fresh and separated. Or just use whole eggs if you prefer.)
Canola Oil (about 1-2 teaspoons)
Veggies of your choice--chopped onion, bell peppers, spinach are my regulars
Cheese--I usually choose a lower fat or 2% cheese



Heat oil in small non-stick skillet. Add vegetables and cook until onions are transluscent. I like to even let mine brown just a bit.




Add eggs. Season as desired with Kosher salt and freshly-ground pepper.


I learned the next trick watching a chef cook omelets to order at a hotel restaurant. As the eggs start to cook,  lift the edges with a spatula (remember my cool, silicone spatula that nothing sticks to? It's perfect!) and let the uncooked egg run underneath.


Do this all the way around, continuing until all the runny egg on top has run underneath to cook.


Now, flip the omelet over. I waited too long since I was dealing with the camera and overcooked mine! So don't look too closely at this photo! :)


Top one half of the omelet with cheese. My fav is Sargento Reduced Fat 4 Cheese Italian because it melts so smoothly.





Fold omelet over and serve!

  1. yum! I love eggwhites- the only ways I like yolks is if they're scrambled or in deviled eggs and even in those I like to scrape the filling pretty level or a little lower.

  2. Susanna, I love egg whites, too. I'll eat the yellow in deviled eggs. But if I'm having hard-boiled, I usually give the yolk to someone else. :)

    By the way, those are yellow bell peppers in the photos. More often, I use red or green.

    1. well I have to do an even number of boiled eggs for tuna salad, etc because I have 2 dogs..the LOVE the yolks!

  3. Yippeeeeeee!!!! You didn't even sneak a bit of ham in there! LOL. And you taught me something. Well, a couple of things. First...I never cook my veggies first and I bet that makes a yummy difference especially with mushrooms and onions. I just never bothered because I only have one pan and I figured that I didn't want the fuss and bother of cooking the veggies and then cleaning the pan and starting on the omelet part. It never occurred to me that you could just pour the eggs right on over the cooked veggies! Duh! And adding the cheese last and folding it over...yummmm. That's a bit different from what I do too, so see, you can teach an old vegetarian new tricks! LOL. I'm going to make this tomorrow night for supper. I'm going to be so healthy from all these YankeeBelle recipes!

I'm not sure where I first saw to do the veggies first but it made all the difference to me - it was just in the past year or two - I hate hard veggies in my eggs but cooking them first they taste so much better IMO! another thing I 'learned' that was a 'double duh' moment for me - I like breakfast tacos with potatoes but they take so long to cook - someone on another forum mentioned doing their 'usual' breakfast tacos and 'of course diced the potatoes, coverd with water, and cooked in the microwave then added to the skillet to cook after they were done' I was like 'whoa'! now I can have potatoes in about 5 min and they're soft then I brown them in the skillet or as close to brown as I can get with my impatience!

  4. Kav, I'm glad you're going to try it! I think you'll love it. When I have it for dinner (or even a late night snack--I'm so bad about eating at night!), then i sometimes sprinkle on a little Frank's Hot Sauce. :)

  10. Oh Missy, I passed up my spinach omelet in favor of yogurt and peanut butter toast this morning, and now I'm regretting my decision.

    But omelets are just as good for lunch, right?

    The only difference in mine is that I use whole eggs - the yolk has way too many Omega-3's, vitamins and minerals to pass it up, and if you're concerned about cholesterol, read this article:

    One thing I love about this omelet is how you can mix and match the veggies depending on what you have on hand - mushrooms, peppers, onions, spinach... And I always keep a bag of frozen chopped spinach in the freezer in case I'm out of fresh.

  12. Some great articles, Jan! I actually choose whites just because I prefer the taste. But I do eat whole eggs sometimes. Also very interesting about the free-range eggs being even higher in omega 3's. I do buy free-range eggs! I'll have to remember that. Will have to include a whole real egg on occasion. :)

    You know, I used to love 3-minute eggs when I was a kid. I can't really remember where along the way I quit liking the yolks.
