Favorite Friday--An Amazing Salad

Missy Tippens, here. And I have a new favorite salad to share. Let me say, first, that it takes a little longer to prepare than Ruthy's cabbage salad (which I've eaten twice this week already!). But I love my new favorite. And it's still pretty quick...

Missy's Wilted Spinach Salad

Ahead of time, boil some eggs to keep on hand for when you want this salad. Store in fridge.


Ingredients for 2 large meal size servings:
Baby spinach leaves (I buy pre-washed to make life easy)
Mushrooms (about half a container)
1 shallot
4 slices bacon
2 Tbs. Balsamic Vinegar
2 Tbs. Red Wine Vinegar
1 Tbs. sugar
2 Boiled eggs
(Wheat thins are optional to snack on while cooking and got included in the photo by accident!! LOL)


Fry bacon on medium heat.


While bacon is cooking, chop the mushrooms and shallot.


Remove cooked bacon to absorbent paper towels and and SAVE THE DRIPPINGS (a nice way to say grease). (For Kav and other vegetarians, just skip the bacon and heat some olive oil in the pan.)


Add scallion to the skillet and cook until translucent. Add a pinch of Kosher salt (optional, but something I feel the need to add to any vegetables I'm cooking!)


Add the vinegars, whisking constantly.



Lower temp a little and add the sugar, whisking constantly. (Be careful of how hot it is. The second time I made this, the sugar hardened and I made a very strange candy!) :) Cook a couple of minutes until reduced.

Meanwhile put however much spinach you want into a serving bowl and add the mushrooms.


Pour hot dressing over the spinach and toss immediately to slightly wilt the greens.


Top with crumbled bacon and chopped eggs. Toss.


Serve and enjoy!

  1. I will try this for Davy... He loves spinach and this is such a German-style thing, right?

    Dave's grandma came over from Germany in 1911 and a nicer, stronger, harder-working woman I've never met. She taught me so much.

  2. LOL -- yay, a vegetarian option. I'll definitely be making this one without the Wilbur! I'll pick up the ingredients in my grocery shop tomorrow morning. And -- ta-da -- guess who made Ruthy's broccoli slaw salad? And even got brave enough to throw in some almonds and apples? Yummmmmm!!!!!

    1. ISN'T IT SO WONDERFUL???? AND I LOVE IT WITH A LITTLE CHOPPED PEAR OR APPLE OR A CLEMENTINE. Then I think I'm having a treat, LOL! ;) I'm so proud of you, Sistah!!!

  3. This does sound kind of like a German potato salad, Ruthy - plus spinach and minus potatoes.

    My grandmother (Swiss-German) used to make wilted lettuce this way, but since she developed her homemaking skills during the depression there was no bacon, mushrooms, eggs... Just hot sweetened vinegar and lettuce. It's a great way to use extra lettuce when the garden is going full steam in June.

    I'm working on taxes this week - fun, right? This year is complicated with a relocation, house sale and purchase, college kids, claiming a small business for the first time... but before I go any further on the taxes, I need to use the info I've gathered to fill out the FAFSA. Oh, the joys of having children in college!

    1. I held a party the year I did my last FAFSA and Collegiate Screening Service or whatever that twenty page thing was that a few of our schools required. I had the FAFSA pin number posted on my office wall for years.

  4. Ruthy, I never thought of it as German, but I guess it is kind of like the potato salad. :)

    Kav, you crack me up!!! Wilbur!!! LOL Glad you finally tried the broccoli slaw salad! But watch out. You might get addicted like I am!

    Jan, I was just celebrating this morning that I get a year off from the FAFSA forms!!! woo hoo!!!! Oldest graduates. And next child is only a junior in high school this year. :)

    1. Ah yes, FAFSA. This is our 7th or 8th year...with at least 5 more to go (Sr. in high school is looking at an Engineering program that takes 5 years). I almost have my PIN number memorized...

  5. By the way...the first time I had this salad was actually a wilted lettuce salad. I fell in love with it! I just thought I'd try it on spinach to see how it turned out.

    1. Dave's mom does wilted lettuce. That's what made me figure it was German because she's German. His father's side is total mix American, but mom's parents were both German born.

  8. Virginia, there's just something about bacon grease and with a touch of sweet and balsamic vinegar that's good together! Hope you like it (if you try it). :)

  9. hey everyone! wow ya'll put some work in these salads! I'm still wanting to do the broccolieone - well the version I had had the crowns cut in thirds and fourths but think the dresing was the same - mayo and sugar? - had bacon(yum!), raisins..can't remember what else my mom put in it.
    this sounds good too - one of these days I'll probably get around to trying it. maybe next week when I'm off - could do it while I attempt yeast bread LOL!
