Speaking of French Toast...

The Belle, here. Last week when I blogged about Belgian waffles, Patricia mentioned French toast. Well, I just love French toast! I recently bought a new cookbook just because I opened it, and the first recipe was for a yummy looking Aunt Marilyn's Cinnamon French Toast Casserole. :)

The cookbook is called 3 Books in 1: Church Potlucks, Sunday Suppers and Bake Sale Cookbook.


I had hoped to make this recipe to share it with you, but I spent Sunday after church nursing a cold and resting. Plus, I should have started it Saturday. So I don't have photos to share. Maybe one of you can try making it and share photos with us!

Note: This is to make the day ahead and refrigerate overnight, so plan better than I did! Also, I think I'll be eating this with real maple syrup. :)

Aunt Marilyn's Cinnamon Frech Toast Casserole

1 large loaf French bread, cut into 1-1/2 inch slices
3-1/2 cups milk
9 eggs
1-1/2 cups sugar, divided
1 Tbs vanilla
1/2 tsp salt
6-8 medium baking apples, such as McIntosh or Cortland, peeled and sliced
1 tsp ground cinnamon
1/2 tsp ground nutmeg
Powdered sugar (optional)

1. Place bread slices in greased 13x9 in glass baking dish or casserole
2. Whisk milk, eggs, 1 cup sugar, vanilla and salt in large bowl until well blended. Pour half of mixture over the bread. Layer apple slices over bread. Pour remaining half of egg mixture over apples.
3. Combine remaining 1/2 cup sugar, cinnamon and nutmeg in small bowl; sprinkle over casserole. Cover and refrigerate overnight.
4. Preheat oven to 350 degrees F. Bake uncovered 1 hour or until eggs are set. Sprinkle with powdered sugar.

Makes 6-8 servings

    It's also very similar to a recipe I've made for years (no apples but includes orange juice) after Lee McKenzie posted it on her blog for Easter brunch one year. It's so easy on a holiday morning if you've prepped it the night before. I just made it for Christmas.

    Hope you feel better soon! I'll bet all that NYE partying at Seekerville just plum tuckered you out.

  2. Yuck, I'm just over a nasty flu/cold so I feel your pain (and stuffiness) and hope you feel better soon. Probably best not to have all that dairy right now anyway! That looks like a great and practical book. I'll have to check and see if I can get it up here. And I'll definitely try that recipe...with maple syrup on top!!!!

  3. Mary! That sounds even better. I have to admit I was thinking of leaving out the apples! LOL I just love plain French toast so much. :) Maybe you can share the recipe with us on here after you make it next time!

    People at our new church take turns bringing something breakfasty/munchy for fellowship time between Sunday School and Worship. I'm not on the rotation yet, but when I am I think this will be perfect.

    Yes, this would work well for that since you could prep the night before. We do the same thing between Sunday school and the service. I usually make banana bread or run to the grocery store (across the street from the church!) to buy donuts when I forget until too late. :)

  6. Wow, this sounds so good! But I can't imagine it would all fit in a 13x9 pan! But I could be wrong. I have a bigger casserole I might try it in.

    I empathize about the cold, Missy. I just got another one and I can't believe I'm sick again. I was sick for nearly the whole month of November, had to go to the doctor 2 times, and I just got over a cold a couple weeks ago. CAN'T BELIEVE I'm sick again. Boo hiss.

  9. Thanks, Melissa. I had a rough evening. I think because the cold medicine wore off while at the grocery. But I came home, begged the family to unload everything. Got the pills down me and conked out on the couch. I feel a little better now after eating--eating a Ruthy salad! :)

  10. Have any of you tried Vitamin D3 supplements? I started taking them last year at my doctor's recommendation and it was like a miracle. Even being with a class of 10 year-olds each day, I stayed healthy.

  11. MaryC - I take Vitamin D3 and love the difference. I take 5000mg on cloudy days, 3000mg on sunny days, but none if I'm going to be out in the sun for any length of time.

    It made a huge difference in my mood last winter, and I haven't been seriously ill since I started taking it.

    sounds yummy but I'm afraid to make it for me to eat 6-8 servings! (I'd probably do it!)

    I take vit D3 - dr said I was low on my last bloodwork. think mine is 2000 IU. I also got sick over Christmas - not sure if it was a milder case of wht my friend still has or if I had something entirely different. maybe it'll make a difference in my mood..can't tell yet with all the yuck I've been going through!

  14. Thanks for recommending the D3, ladies! I was recently on massive prescription dose because my level was low. Just got re-tested, and it was fine. Yay! But I should probably do some over the counter supplements if I'm not out in the sun.

    Susanna, maybe you could freeze some of the portions if you decide to make this. :)
