Old Fashioned Italian Likamias with Tina Radcliffe!


Once again, Tina Radcliffe brings you quick and easy. This recipe comes from the Italian archives. In fact for you historians, it comes from the Sicilian branch, the Barreca and Privitera family. We call it Likamias, however those of us who cannot wrap their tongue around the name simply call them Aunt Gracie’s cookies.

Assemble your ingredients:

2 cups sugar
½ cup cocoa
½ cup butter
½ cup milk
1 tsp. vanilla
½ tsp. salt
3 cups quick oatmeal
1 cup shredded coconut


Here’s a photo of our new beaker. The other one retired from over use. You can have your own from Amazon here.  
Bring vanilla, sugar, cocoa, butter, salt and milk to a bubbling boil. Boil for 2 minutes and no more. Remove from heat . At this point you have to work quickly so have your coconut and oatmeal measured out and ready to add. Stir fast.




Working quickly as chocolate will harden, drop onto waxed paper by teaspoon fulls. I use a small ice cream scoop. Makes 2 dozen large or 4 dozen small cookies.
Caveat: It is best not to make this on a humid day or the cookie will not set up. I ran out of quick oats and used regular this time, chewy but still delicious.

    Teenster, I've got a similar recipe and they're a huge success at holiday time or whenever I'm baking. Although I love that these 'no bakes' are just that! Thank you so much for being here today because I know you've been working KILLER HOURS.... and I'm so proud of you getting up early on a Saturday and hanging with us.

    (she is not really up. It's the middle of the night there. I'm just building her up so she'll know how LOVED she is. Really)

    1. Tina, these sound amazing! I have NO clue how to pronounce the name but whatever, it's the taste that matters. They contain two of my favorite things - coconut and chocolate! And the oatmeal makes them healthy, right? ;)

    Tina, these remind me of cookies I used to make with my friends when I was a teenager. I lost that recipe so will have to try these! Thanks for sharing!

    I also have a similar recipe, but it doesn't include the coconut. I know my dear husband will think he's died and gone to heaven when he tastes one of these!

    And believe or not, I even have coconut left over from Christmas baking :)

  5. Jumping up and down with excitement here! I LOVED these cookies when I was a kid -- first I ever learned to make but I lost the recipe and haven't been able to find it...until now! Yeehaw! And I have all the ingredients except the coconut, but I can get that on the way home (I'm a work). Thank you!!!!!!!!!!!!!!!!!!!

  8. Tina, these were scary easy to make. I can see why your husband asked you to stop.

    Also, I didn't have to worry about them hardening too fast because I was eating them as I went. Ooops, was I not supposed to do that?

    Also, the scent as the hot chocolate hit the coconut! AMAZING.

    I'm not supposed to bake them, right? Just eat them as they harden (or before;) ) Too late now.

  9. What I remember most is the smell of butter and sugar melting with cocoa in it. I used to spoon that out of the pan and eat it by itself. :)

    Dave doesn't eat sweets. Almost ever. STinkin' un-American, isn't it? Because if I make something, it sits there staring at ME...Mary, you did the right thing, why wait until they get stale? Eat rapidly and repent at leisure. I think that's the only sensible way to go.

    Teeena, can you share the recipe for those spicy Chocolate cookies your mom made for me? Please. Soon. And DON'T TELL everyone that she makes them and keeps them in the freezer, it's okay if they all think she did it special for ME... I like feeling special.

    ok I gotta have one of those beaker thingies..gotta gotta gotta! I'm tossing stuff in my kitchen and I'm so sick of plastic junk - not that all my plastic is junk but a lot of it is! of course I don't have the glass measuring thingy because one of the doggies knocked it off the counter - my fault for not only leaving it on the counter but for defrosting the frozen ground beef in the microwave in it..stupid me.
