Tina's Chicken Tortilla Soup!

I’d like to be very clear that I no longer cook. I served my time and now I only “cook” that which is absolutely necessary for survival and is quick, easy and tasty!


Tina Radcliffe’s Easy and Delicious Chicken Tortilla Soup


First gather your ingredients:
Bear Creek Tortilla Soup Mix (Wal-Mart carries this or you can get it on Amazon
Tyson Southwestern Chicken Breast Strips (frozen)
Shredded cheese of your choice
Avocado
Tortilla chips or strips
Lime
Sour Cream is optional
Cilantro is optional
Sometimes I add chopped green chilies to increase the spice 
level




Add eight cups of water to a large pot. Bring to a boil and add your soup mix, stirring well until powder is dissolved.




Reduce heat to medium and add frozen chicken.





Simmer for 15 minutes, stirring occasionally.
Ladle into bowls.
Cut a slice of lime and squeeze the juice over the hot soup.
Sprinkle with chips and cheese.
Top with sour cream, and slices of avocado.


May top with chopped cilantro.
Makes eight servings.  (I double the batch for company.)





Goes well with deadlines and is especially yummy while you are reading my latest release from Love Inspired, Oklahoma Reunion.

Oh, and you can always use your leftover turkey and make Turkey Tortilla Soup!

    Or a combination.

    But I'm pretty sure the Google-guy would blame ME.

    I'll have to make some and read the book again. No hardship; you know how much I loved it the first time.

    I wonder if I could do it with beans substituted for the chicken for my vegetarian daughter.

  9. sounds good! we have Gringo's here and their tortilla soup is delish (but expensive!) will have to try this. hey there's not butter in it! :-)

    I'm dying to make this soup. I've had it at a party before but never tried to make it. Of course, anything with tortilla chips and sour cream is bound to be good!

  13. Mary, you are so kind. It comes with some kidney beans in it but a very light amount, but you could add two kinds of beans and it would be delish and satisfying and have a nice protein content.

  14. Really good soup, Jan. Fast and if you make a double batch you can freeze it. Last year I sent this to young adult family members on their own as part of their Christmas stocking with instructions. (mail in zip lock bag)

  15. OH -- I'm glad Mary C. asked about a vegetarian alternative. I'm going to try it -- if I can get the soup mix up here. We have Wal-mart, but they don't always carry the same things they do in the states.

  21. Linnette, I just bought one that was firmer since I've bought them too ripe a few times lately. And this one had bad spots I couldn't tell were there. So it's kind of tough to know!

  23. Missy, too funny on my typos. I guess you can really tell how I feel about cooking (coking).

    My daughter eats a ton of avocados so what I've learned is if the feel only slightly soft to the touch, that's best. Once they feel really soft, they're too far gone. You can also tell somewhat by the color. When they're bright green, they're not yet ripe. The Hass or Calvados ones turn blackish green as they ripen.

    Teeeena, we're trying the broccoli cheddar this week. Well. Soon. And I'm adding chicken to it because it says you can. And cheese. Nothing could be bad about broccoli cheddar soup with chicken and cheese. I'll let you guys know how it is. And Kav, I googled it, but don't have an answer for you. It's interesting that you can buy it cheaper from Food Service Direct... but then they charge $7-10 shipping, which takes the six-pack right back to the mid-thirties.

    We had "Bake-a-Memory" day today... And I sent all the cookies home with the grandkids except a few for Dave's dad.

    Right now I'm wishing I'd saved one or two.
