Simply Saturday!

Saturdays are huge around here! I can extend my writing time because I have the day off, I can trust Missy to open up the cafe doors and get the coffee started and I can pre-list chores and check them off madwoman style because THAT GETS ME MORE WRITING TIME.

And as I've mentioned on the Island and in the Village Streets, I love writing. Just... Love it.

SO:

We're aiming to keep Saturdays simple. Sweet. Easy-peasy! And we'd love to have you guys join us on the CAFE BANDWAGON... Be part of the village, literally, so if you'd like to share a Simply Saturday Quick recipe (anything, including quick meals!  LOVE THEM!!!) or guest blog with us and share your kitchen fun-ness during the week, either e-mail Missy or me...

Or e-mail us at seekers@seekerville.net.

We'll schedule you in and WE'LL HAVE A BALL!

Today's  simple treat is Chinese Noodle Candies. THESE ARE EVER POPULAR ANYWHERE I GO AND THEY TAKE FIVE MINUTES MAX.

Yes.  You heard that right!

1 (12 oz.) bag of chocolate chips
1 (12 oz.) bag of butterscotch chips
2 c. Chinese noodles
1 c. Spanish peanuts
Melt chocolate chips and butterscotch chips in a double boiler. After chips have melted, remove from heat and add Chinese noodles and nuts to melted chips. Mix and drop by teaspoons on wax paper. Let cookies set and harden. Store in an airtight container. Makes 4 to 5 dozen cookies.
This recipe can be varied limitless ways. You can add raisins (although my children THREATEN MY LIFE if I do such a thing. I raised me some raisin-haters! Who knew???)
Coconut  (I like to use toasted coconut. To toast it you put it in the oven at 225 degrees and try to check it before it burns. Luckily it takes a LONG TIME for anything to burn at 225 degrees.)

Cashews (I like the salted peanuts best, but cashew lovers think I do this just for them. Point-builder!)

I always make a double batch. They freeze well, and they mail well. I've sent them all over with nary a complaint!  ;)

Enjoy your Simply Saturday!

  1. I can vouch for this one! I got the recipe from Ruthy and made it last year for a cookie swap party. They were a huge hit! I dropped the peanuts all together and did only cachews. They were yum!

  2. Sounds delicious. I know a friend I'm going to pass this recipe on to. She'll love it.

I'm a huge HUGE coconut fan if you haven't figured that out yet ;) so I make a similar recipe with semi-sweet chocolate chips and toasted coconut. Who needs to pay Russell Stover $10 a box when I can make them myself. :)

If you make them with dark chocolate (which I can't really bring myself to love) they're even sorta healthy.

    Happy Saturday and Happy Writing!

  3. I LOVE THESE! It's the combination of chocolate and butterscotch that makes them melt-in-the-mouth delicious!

I make Rice Krispie treats, add peanut butter to the mix, and then when they're cool I slather the top with butterscotch and chocolate chips melted together. Mmmmmm.

  4. I just want to know how you stay so slim eating all this delicious stuff?

  5. Tina, she admitted yesterday that she's been eating low carb. So I think she's just torturing us. :)

  6. I'm gonna have to email one of you my mom's recipe for Corn Flakeys. My all time favorite Christmas candy, and so, so easy.

We tried these when I was a teenager, but we did chocolate ones and butterscotch ones. Mixing the flavors would definitely make them better.

  7. Oh, I'm loving these ideas! And Jan, we have an old Rice Krispie recipe that I'll share soon... It's stinkin' easy, and it's on the Internet, BUT...

A local bakery made it FANCY SCHMANCY and sells them for a lot of money... And it's the exact same thing but in let's say... different FORM... I'll blog about it and we'll see what a difference a "spin" makes! Bill O'Reilly will be so proud! ;)

Andrea, yes, tell us about them! Better yet, we're looking for guest bloggers over here at the Cafe, girls. Give Missy or me a shout and we'll hook you up. What better fun than to share recipes around the coffee table? And NEVER HAVE TO LEAVE YOUR HOUSE???? ;)

Mary C., I do the same thing. Toasted coconut and either milk or dark chocolate gently melted...

And I use that for "Bird nests) at Easter. Three or four of the 'little' jelly beans tucked in a "nest" of chocolate and coconut.

    Awesome!!!

And I've eaten more donuts this week (cider fry cakes) than I have in two months. I love/hate apple pumpkin season. Because my resolve wanes...

    Disappears.

Goes south. Literally. To my derriere because Apply-goodness just TASTES SO GOOD!

  8. I hear you, Ruthy. Picked up some cider donuts at the farmer's market yesterday. And then this season is followed by holiday baking!

    Willpower, where art thou?

  9. So it's not Saturday any more -- it's Sunday, but I just discovered your new site and love it. Here's my easy-peasey recipe to add to the list:

1 cake mix (any kind, any flavour)
    2 eggs
    1/3 cup vegetable oil
1 - 1 1/4 cup (or more) add-on --What's an add-on? Things like M&Ms, chocolate chips, Reeses Pieces, coconut, nuta etc. Anything to spice up the cookie -- you can even mix and match.

Bake at 350 for 9-12 min and voila -- 2 doz easy-peasy cookies.

  10. KAV!!!! Girlfriend I'm so glad you found us! I love this...

I think I did something like this years ago, cake box cookies....

Might be a little different, but I will try these. I love great cookies! And easy works ANY TIME OF DAY, ANY DAY OF THE WEEK!

Isn't this kind of fun over here??? Although Missy really shouldn't wear her pajama pants in the cafe on SUNDAY???? Where's your decorum?

  11. Yum, Kav!

And who mentioned Rice Crispies? Also, those cornflake cookies? I love both!!

Okay, gotta go eat chocolate chip cookies! Not Ruthy's recipe. This was a frozen pizza that came with TollHouse cookies as well. Digiorno. :)

  12. Try a package of peanut butter chips in the above recipe instead of butterscotch. Reese's Pieces dudes know how to mix'n'match chocolate and peanut butter.
